My short list of what's in for sure:
Salt MSG White Pepper Black Pepper Coriander Ginger Sage
Beyond these everything has a question mark. That's a lot of question marks!!!
Among the questioned (in no particular order):
Allspice Star Anise Marjoram Oregano Cayenne Pepper Dried Chili Pepper Flakes Chili Powder (from mild to hot) Sweet Paprika Smoked Paprika Hot Paprika (Hungarian) Cardamom Celery Seeds Savory (Summer, and/or Winter) Thyme Rosemary Mustard Seed Dried Lemon Zest Dried Orange Zest Vanilla Bean Clove Nutmeg Cinnamon Five Spice Garlic Onion
Certainly some of these (and potentially others that I've left out) are also essential. But which ones?
I left Allspice out only once, and the result was terrible. But many add Star Anise and leave out Allspice...
What is your list of the ingredients that are certainly in? What ingredients are you on the fence about? Could you guarantee that any of my 'questionables list' items (or others I've left out) are assuredly in, and if so, which ones?

deepfriednew101, that's a much better list of the "question mark" ingredients than the one I came up with. Which among these "question marks" is definitively "in" KFC_OR?

Is it possible for there to be more than 11 herbs & spices in KFC_OR? Edit: I'm not looking at salt, pepper, or MSG here...

I saw a chart once where the person broke them down by almost type of spice so for example:
(mace, nutmeg) (cayenne, Chili Powder, Paprika)
You could look at them in streams if you will
With shortage, cultural and cost changes over the years probably many of the above have been in rotation at one time or the other. The first question may be what has never been there. As I stated before if originally he used Tones Chili. He or the corporation may not have want to license the product so they switched to X or created their own blend. Which may have taken the stand alone H&S past the 11.

flg I so many charts that cross reference different spices. I will post some when I find them for reference points This will be helpful! PS: deepfriednew101 has often worked along these lines as well. Subject to correction, I'll toss out these: 1) Allspice 'Substitute' ~= Cinnamon, Nutmeg, Clove, and a hint of black pepper (all at some unknown ratio) 2) Star Anise 'Substitute' ~= Cinnamon, Nutmeg, Clove, and Anise Seed (all at some unknown ratio) 3) Chili Powder ~= Chili's, Cumin, Oregano, Salt, Garlic (all at some unknown ratio)

I have studied combinations of spices from the 1920's and Been making spice blends for a lifetime now, and its been passed down from family. I agree with CHS that many combinations of spice work well together. Parsley, Sage, Rosemary, Thyme, even is in a song from the 60's 70's These are the most basic combinations that have been world wide. The Top two in the list there is NO country that I have traveled that does NOT use the combination. Salt / Pepper are even list as ESSENTIAL items in countries. Onion and Garlic are Primary Staples. In many countries dehydrated items are a Mastered trade and preservation of the foods was regarded higher then any other thing. Much was done in respect that they were used for medicine. Salt / Pepper Onion / Garlic Milk / Eggs Basil / Thyme Sage / Savory Mace / Nutmeg Rosemary / Thyme Parsley / Thyme Lemon / Dill Sugar / Cinnamon Yeast / Flour If the Vials hold any clues to the principle of combinations working together then one might be working with 5 possible combination and 1 extra spice 10 / 2 = 5 plus 1 KFC corporation has said that the vials are 11 Individual spices ? or Did they use different words to make people think they are individual spices in each tube? KFC also has said People will be surprised with some items ? what is your understanding of the Words and combination of spices?

Well as I admitted before. I do not put a bunch of faith in the vials or any other representation of the 11 H&S being accurate. I know others have and that's fine with me. I have looked at them all and best I can see is commonalities in some of the "known" ingredients as posted in the initial thread.
But. I think there is nothing that would indicate other than a visual interpretation, if one or more of the vials contain a blend. Could be true.
I do know I don't count salt as many don't. I don't count multiple grinds of pepper as individual numbers. I am not stuck on different varieties of pepper needing to count individually. Best case pepper(s) count as 1 of the 11. If pepper even counts at all.

Depending on the OR version you are striving for 1939, 1950, 1977, today. Whatever it is. My starting point would be to cull the list down based on that exact time frame. So for example, I grew up on mid 70's KFC in Canada. So I would choose to apply my theory that by then, I would NOT want to be paying royalties out to other companies for their spice blends. So I personally would eliminate things like BBQ seasoning, Poultry seasoning, five Spice and things where I don't want to get caught up in brand name licensing.
Now that doesn't mean it was never used. It just doesn't fit at that point in time for me. Now you can argue, well what if Brown and Massey or whoever just mixed their own Poultry Seasoning and they then just included it in the overall spices they were mixing for you. Then the only argument I could make is. Are you sure they still wouldn't want some extra revenue from you as a product of theirs is a main ingredient in a multi-million dollar business. Even though they are mixing and distributing spices for you? No one leaves money on the table.
For other time frames it may be availability etc.
