What I notice with caraway in referring to a spice handbook from around the late 30's. It was used in all the formula for summer sausage making. Which also include Dill and Tumeric. But only in 1 or 2 other sausage recipes and at a level less than 3% of the total spices. It is not listed in any formula for stuffing. If CHS claimed that KFC used ingredients from sausage and stuffing making then for me caraway is an outlier based on these formula.
Not to say it wasn't. But as of now my list is too long of more than highly probable's

I don't find any reference that lists eugenol as a constituent of Caraway Seeds. So one or more eugenol sources would still be required if Caraway is used.

Oops, I also had earlier missed Thyme, that makes 11, but in no particular order as to weight (yet).

I just munched some Caraway seeds. They taste just like Rye Bread. No taste of Anise/Licorice that I can tell. Likely that means they have little to no eugenol.

Our Caraway seeds (as for a lot of our spices) are likely quite old. But they are whole seeds. Not a lot of flavor overall. Perhaps that means more are required rather than less. Edit: Of course it could mean its time to toss them out and buy fresh.

I think there may be a fine point in what "has" been in KFC. What are key ingredients that have been main stays in KFC forever more or less. And what is in it in the time frame you are cloning. Everything listed on all the forms may have been in it at one time.
Sorry I don't believe caraway seeds are in it today's or have been for sometime if at all. I just can't find in looking at it's taste etc. where it may fit, what role does it play, what does/could it replace on the list if it had too.

Caraway Its flavor has a nutty, bittersweet sharpness with a hint of citrus, pepper, and anise.
