Coriander Just a example Coriander NOT listed on Sexton Commercial Large Tins Like the Jamaican Ginger in the KFC Museum Display case No Star-Anise either. deepfriednew101, do you believe that either Celery Seed or Celery Salt was a component of the circa 1940 era and/or circa 1955 era Original Recipe coating mix? And also that Coriander was not?

All are external items Veg that were used BY SPICE makers in Blends going back to the 1930's
Basil, Dill, were used as the Aromatic in items

And also trying to determine how much Sweet Basil and Dill Seed/Weed to add to 1.5 Cups (200 grams) of Cake Flour.

We have mixed Both Dill Seed and Dill Weed (Reasoning the OLD MILLS were stone Mills and they would Run Batches of Dill either seed or Dried Forum in sequent and they did not worry about the Cleaning as it all was Dill Item.
NEW AGE PROCESS is Grinding with Cross But Blades and Sieves. A Apple to Orange Process.
its No different with Mace and Nutmeg there was tones of cross over, in the 30's
NOW the New AGE just adds 30% fillers
1% or 2 Grams of Dill would be a LOW value and 2% High 4 Grams of Dill ( recommend mixing 2 Grams of Each and then use only 1/2 in the MIX same for Basil start with 2 Grams
Dill was used in the South with Chicken Dill and Cream for much longer then Fried Chicken BUT Dill was a very seasonal item typically,

I have never explored either Dill Seed or Weed in relation to chicken. Other than in sauces.

The one ingredient I need to at some point give another go to is Cardamom. I used it once, it didn't do harm or stand out. I dismissed for cost but that may not be fair. It is listed on the Sexton can for that era. Where as Star Anise is not. I have one slot in my next cook for either Anise Seed, Star Anise or Cardamom
