There has been an ongoing controversy of sorts raging between flg and myself on one side (favoring that it is beneficial for recipes to be kept at relatively lower overall H&S ingredient weights) and deepfriednew101 on the other side (favoring that it is beneficial for recipes to be kept at relatively higher overall H&S ingredient weights). To resolve this, I propose that all three of us cook this relatively higher ingredient weight recipe and then comment upon it vs. our best 'more mainstream weighted' recipes:
Edit: Is this worthy of a try? I actually believe that it sits rather midway between the low weight and high weight sides of the fence as to H&S.

I can cook it on Wednesdays for a special wing night test We all need to be more or less on the same page. Can we settle upon legs and thighs instead?

our Wednesdays are a dedicated wing night BUT we will make some thighs for a test.
As our process for Drumsticks is a double coated method which may be different then others
the Wings and the Thighs are a single coating ?
are you using Fresh Milk and Eggs ?
we can follow any formula of Fresh or Dry ingredients it does NOT matter as we use both Just need the guidelines.

I use an egg wash with fresh milk and eggs. I pre-dust my chicken in Potato Starch or Cornstarch before sending it into the egg wash. Then I thoroughly single coat in the seasoned flour mixture. Thighs all around would be best.

The ONLY thing I note from your recipe is NO Mustard
Which I maintain the Coleman Double fine Mustard is the 13% spoke about from Winton S
I will maintain the original Pea Tray Paper listed Mustard and Celery as allergens
