The Grand Finale, 1.1 recipe is now mixed and melding, leading up to cooking in roughly about 2 - 3 hours.

This is the first recipe for me in quite a long time that doesn't contain a licorice ingredient (which for me is generally Anise Seed, and only occasionally Star-Anise). A preliminary smell and taste of the spice mix after blending it into the flour and mixing it well is not giving me an indication of the note. But this is allergy season, and my sinuses are mega-stuffed up. I hope it evolves the note somehow during deep frying. But as of now I think it needs a shot of Star-Anise (albeit that I won't be adding any). In my opinion it's lacking licorice, sweetness, and a bit of Cinnamon as a first guess. And only Star-Anise can deliver all of these three.

Here's the eating report for 'The Grand Finale, 1.1':
First, we split the coating into two halves, and then added 0.12 grams and a smidge of Star-Anise to one half (this would have been the equivalent of adding 0.25 grams to a full sized batch scaled to 200 grams of flour). 4 thighs were then cooked in the version 1.1 recipe straight up, and then 4 thighs were cooked in the tweaked with Star-Anise recipe. On to the report:
1) Neither recipe tasted anywhere near as good as my Recipe #17. My wife said I should stop messing around and just cook #17 with Cayenne. 2) We had a split decision with my wife favoring the Star-Anise batch, and me favoring the straight up batch. 3) I thought the Star-Anise masked the other flavors and overpowered them. The without Star-Anise batch tasted saltier, and pleasantly both more herbish and more spicy, and with this in a very good way. 4) My wife said that without the Star-Anise too many individual flavors were annoyingly coming through, and with the Star-Anise the flavors were way more balanced. 5) Too much Clove. There were 0.25 grams this time vs. 0.20 grams for Recipe #17. 0.20 grams works better. 6) Not enough Coriander was present in version 1.1 to express a KFC level of Nuttiness character. 1.25 grams of Coriander seed for this batch and 1.5 grams for Recipe #17. Extra Mace vs. Recipe #17 failed to elevate the nuttiness. 7) Even at 0.50 grams the Cayenne Pepper was not delivering the lingering bite of KFC OR, and what bite there was did not resemble the KFC bite. That said, we both agreed that this was the best Pepper level we've achieved so far. 8) At 30 grams the Salt level is getting real close to KFC OR. Perhaps 1 or 2 grams more and it will be there. 9) The doubled Summer Savory (0.50 grams vs. recipe #17 at 0.25 grams) plus the addition of Marjoram was a mistake. About half the Summer Savory, zero Marjoram, and a bit more Sage might be the best plan here. Or perhaps 1 gram of Sage, and 1/8 gram each of Thyme and Summer Savory, but certainly the Marjoram needs to be left out. 10) I'm now convinced that Anise Seed at 0.50 grams is better than Star-Anise at 0.25 grams by far. At 0.25 grams the Star-Anise is simply too much, but just as for the last time I tried Star-Anise, my wife does not taste the sensory overload of Licorice. Perhaps 0.125 grams of Star-Anise might be OK, but Anise Seed is much easier to control, and just tastes better without any sensory overload. 11) I now believe that the small amount of Cinnamon within Recipe #17 is a flavor positive. And Star-Anise does not derive a Cinnamon like flavor. 12) Cardamom is simply a waste of time. No benefit at all was derived from it's presence. If anything it was a detriment.

As to resolving the ingredients weight issue, I now think a lot comes down to balance, and if the balance is right, adding more H&S may simply upset the balance. Shooting for 32 Oz. bag compliance may be the best bet in my opinion.
And perhaps greatest of all, I now think that the note and a noticeable nuttiness characteristic may be one and the same phenomenon. The miracle lies within pinning down the nuttiness.

I should lastly add that my wife and I can both agree upon 0.50 grams of Anise Seed, but we can never agree at all upon Star-Anise, with me thinking (twice now) that it ruins things, and with my wife having no issues with Star-Anise.
To me this implies that if Star-Anise turns some percentage of the public away (as it does for me) then it is impossible for it to be an ingredient, because no one appears to get turned away by real KFC OR. It might be that Star-Anise and Clove don't play well together.

I have never felt Star Anise was an OR ingredient.

After once being 100% sold on Mace, I now think that (just as for Cardamom) it may be useless to add Mace. Mace only works (if at all) when there is less of it present, and a bit of Cinnamon is present.

I truly believe that a bit of Dextrose Sugar would have been a flavor positive. It's either that or more MSG (which has a level of sweetness). Or switch to powdered milk and egg whereby to benefit from the powdered milks Lactose Sugar.

I wish I knew what the KFC OR lingering bite of Pepper flavor comes from.
Yellow (white) Mustard? Brown mustard? Toasted Brown Mustard? Sichuan Pepper?
I think Sichuan Pepper Corns deserve a shot.

Red Pepper / Pink Peppercorn ? I have Posted these Photo for decades I have Posted the Red Pepper and Cayenne Tin and had lengthy discussion on it WHICH WAS SHUT DOWN AND removed from the other forum. THERE IS HUGE CONFUSION IN REGARDS TO RED PEPPER ? ? ? and 1939 RED PEPPER and also SWEET RED PEPPER
