I know I have chirped this 100's times and will continually chirp it in 1930's the Herbs and Spice would have been more ORGANIC then the most Organic Spices and Herbs in 2023 Just because the chemicals were not what we have and they Did everything BY HAND, ALL Milling was Stone Ground and NOT high speed Pulverized. There was quality control by the Growers and there was HEAVIER Regulations then the IRS and CRA. The producers cleaned the Spices and Herbs and SOLD PURE PURE PURE Spices and Herbs. In 5 Major test in 2022 it was shown that the Spices and Herbs Currently have 25% fillers in the Majority of Packaging ? Think about this from a common sense perspective, if you Gave your Wife or Husband 25% less time caring or affection they would NOT like it and you might be in divorce court. Same goes for 25% less ingredients in a recipe it DOES NOT work the same. Now we have a number.
If there was such a thing as a 26oz seasoning bag. And let's just say that it didn't include MSG early on. 26oz of pure 1940 spices. That would be 32.5oz bag today of H&S only.
A 40oz mix is now 50oz
and so on.
1oz of Sage is 1.25oz. 0.25oz is 0.31oz. So no over the top increase where I am seeing nearly double the amounts being recommended.

Add 6 Oz. of MSG to a 26 ounce H&S bag and you now have a 32 Oz. H&S bag. Add 8 ounces of combined powdered milk and powdered egg to that and you now have a 40 Oz. bag. I believe the current bag is 40 Oz.
Edit: Scaled to 200 grams of flour the combined milk and egg powder would weigh 4 grams. 20 grams - 4 grams leaves 16 grams for everything else in the bag.
Edit #2: If 2/3 of these 4 grams represent milk powder, then milk powder is 2.67 grams. And if (such as it is) milk powder is 36% to 38% Lactose Sugar, then Lactose is about 1 gram. And if lactose is about 30% as sweet as table sugar, then table sugar is 0.3 grams. And if Dextrose is ~65% as sweet as table sugar, then Dextrose is 0.46 grams. Call it 0.5 grams for simplicity.
Therefore if you are not adding powdered milk and egg, you should be adding 0.5 grams of Dextrose, or 0.3 grams of table sugar to every 200 grams of flour.

26 oz H&S today should be 32.5oz
32.5oz + 6oz MSG + 8oz Powdered milk, egg etc.
We need a 46.5oz equivalent all in mixture.

I think coriander falls below Sage in the pecking order. Coriander is at or less than 1g in a 200g recipe. For me anyway. I'd also consider that more with nutmeg back in. It may well be that getting the Coriander Seed and Sage into a harmonious balance with each other while bringing forth an appropriate thereby seasoned nuttiness is is about 65% of the battle. And that getting Zingerone (from Ginger) and Eugenol (from mainly Clove and/or Allspice) into a harmonious balance with each other (while not over-emphasizing these as a team) is about 35% of the battle. In both cases the aroma and flavor sensation need must be satisfied without going overboard into a sensory overload. As Zingerone (which is evolved from the heat-decomposition of Gingerol) molecularly quite closely resembles Eugenol, it may be that adequate Zingerone negates a need for Eugenol, ot that visa-versa, adequate Eugenol negates a need for Gingerol/Zingerone. Zingerone has the (perhaps) added benefit of quite closely resembling Vanillin at the molecular level, and we all know that on the old TCK forum there was a thing about adding some Vanilla. Ken (on the other forum) is exploring the complete elimination of Zingerone. I propose that someone on this forum should bravely consider the elevation of Zingerone and the elimination of Eugenol. This latter approach may be more in keeping with the story of CHS urging a franchisee to add more Ginger. When I added a whopper load of Ginger I did not simultaneously eliminate Eugenol, so I was slammed with a sensory overload of the combination of these two. Things may well have been quite different if I had eliminated both Allspice and Clove.

The obligatory next day eating report for 'The Grand Finale, 1.1':
1) The chicken was eaten re-heated. 2) Not particularly better than yesterdays chicken, but today both versions tasted way more similar. 3) I still gave the edge to the half without the Star-Anise, and my wife still gave the edge to the half with the Star-Anise. 4) Less salty today than yesterday. 5) Less Peppery today than yesterday. 6) Neither version hit me with much of the famous note of KFC OR. 7) Better than our last Lee's Famous Recipe chicken. 8) Various of sensory overloads were still apparent. Too much Clove in the one, and too much clove plus too much Star-Anise in the other. 9) Too little nuttiness character. 10) None of that famous aroma one gets from a bucket of KFC OR.

I'm getting more and more tempted to try the Eugenol Free recipe which I posted earlier.
200. grams Cake Flour 31.0 grams Flour Salt ---------------------- 6.50 grams MSG 0.50 grams Dextrose (or 0.30 grams common Granulated Sugar) 4.25 grams Black Pepper (~half fine, ~half medium coarse) [1] 3.00 grams White Pepper [2] 1.50 grams Coriander Seed [3] 1.50 grams Ginger [4] 1.50 grams Sage [5] 0.50 grams Anise Seed [6] 0.25 grams Nutmeg [7] 0.125 grams Mace [8] 0.125 grams Summer Savory [9] 0.125 grams Thyme [10] 0.125 grams Garlic Powder [11]

I Do Not think you are giving yourself enough credit for this recipe
upon reviewing comments from tasting
It does lack the Pepper and Sage combination of a KFC Both to Low in the Taste.
The M.S.G. could be bumped up also
It has good flavor and NOT as good as Sweet 16 in my mind taste.
Aroma was a Fried Chicken yes BUT not a KFC aroma
Personally lacked the Herb Structure as it had spice side more
I think it could be used as a Base recipe if you were seasoning wings after fried
more pepper, sage, oregano needed and Celery, Garlic, and Onion always helps
