Coriander was NOT a ITEM for regular Store shelves in the 1930's 1940's
I have Asked Many Antique Dealers in USA, Canada, to find a OLD Coriander Spice Tin from the 1930-1940's.
There have many who said they have some and when they send the Photo's the Tins are 1960's as defined by the Color and Print on the Tin's and sending photo's to the Companies who made the spice for definition of year.
Bill S from Marion Kay OPENELY said he added 1 more item to the 11 Herbs and Spices that made it Better.
Coriander was not listed on the Original Marion Kay chicken Spice sent to KFC in Florida, Montana, Utah, Marion Kay was unable to sending spices to Canada and the UK at that Time.
Marion Kay was ONLY suppling the Spices to the NON FRANCHISE KFC CHS was still Controlling in the Back Ground. It was when the OTHER franchises started asking KFC if they could Buy Marion Kay that the Chicken co-op roof was blow off by NEW AGE CORPORATION.

This lends strong (yet incidental or anecdotal) credence to Celery Seed being part of the (only real) original recipe, which has a firm date of 1940, and not Coriander Seed.
I (among others) speculate that Coriander Seed was phased in as a replacement for Celery Seed only after Celery Seed became controversial due to some being allergic to it.

I was never fond of coriander, it is a great spice, we use it in different dishes, but its role in the Original Recipe is a puzzle to me, I never tasted it in KFC, although I am more than familiar with it, never stood out to me in KFC at all, according to X99 it must be directly after Sage in the seasoning, and coriander seeds show up in different KFC herps and Spices photos, like that photo of KFC Japan, but it didn't work with me, it didn't bring any hint of note no matter which combination was used, I may try it again, but I don't believe it is that important to create the special KFC taste or aroma.
I know some guys who beg to differ, one of them wrote once that the more coriander, the more note for him!
The late Lumpy in his last communication with me told me that he started to believe, after long consideration, that it was Coriander seed, and not MSG, that Sanders threw two handful of it in the flour in the 1954 ship trip.
Who knows..

I did some research now. Coriander seed was sold and available in 1930, but it was definitively not an item on everyone's shelf. There are no old single spice tins and I have not seen any spice rack where Coriander seed would have been an item. Flavourwise, I can imagine it was supposed to replace Cardamom, and not Celery. Now Cardamom in my opinion cannot be replaced at all. But with lemony, citrusy and floral notes, it might be what was considered the best and cheapest option.

I don't think the Colonel was being literal when he said "stands on everyones shelf" i think he meant it as in most people are likely to have some of the ingredients standing on their shelf. one household could have had 4 of the herbs and spices and another could have had 7.

I tend to agree with your comment that more Kitchens and pantry's back then had less spices and More Baking item's and Ton's of Fresh Herbs in Summer and Vegetables
There was News articles from early 30's that listed Salt and Pepper as essential as Sugar, Baking Powder, Baking Soda, Yeast in kitchens as for ANY OTHER SPICE it was a Preference.
Most other households had more spices which were Dual Purpose and medicinal and cooking purpose.
Some of the earlier spice racks held 12 spices and herbs.
When you review the Elu / Claudia Recipe it shows simple items and one reference claimed that the Recipe Tommy and Cherry Settle had may be the same as what The Chicago Tribune may have been ? ( ONLY SPECULATION NOT VARIFIED )
when we cooked a side by side review of the Elu vs Claudia aka Joe L Chicago Tribune recipe the Elu seemed to have more aroma. then Claudia BUT the Elu was cooked second in our rotation, so it might have been subjected to aroma carry over ?
My way of diagnosis the spices is CHS started tinkering with the chicken recipe in approximately 1935, Had the 11 Spice and Herbs finished in 1939 According to CHS and the Canadian Original Documents Printed and shown in Canadian Archive's.
so the spices had to be available between 1935 and 1940 then a added element in the 1950's Cumberland Lake Story. Cumberland Lake Falls and Boat Dock was NOT finished until 1952/1953 Time period some say
