What is overlooked is that in the early days, CHS employed bakers, for whatever reason. Coriander is a standard for pastries. You are 1000% and C.H.S. made many dessert's also, Plus Juniper Mint Drink he was Proud of. C.H.S. favorite item was a Fresh Fried Donut.. What was used Pre the conception and shelf sold Coriander was MACE by the Bakers Look at the Old Old 1900 to 1930 Cook Books and Look under Pastry items it will show recipes with Mace and some with Nutmeg while the Coriander was NOT even listed in Recipes until after the 1950's Very very little documentation of Coriander Seed in the Millions of recipes which have surfaced from 1900 to 1930's. Mace was a TOP seller of the 1900 to 1950 until Nutmeg took over, and then Coriander also was a Late item to the Party. Good luck chasing the Coriander Trail It's NOT a Spice or Herb C.H.S. used and was NOT in the Old 1930's and 1940 Photo's from his kitchen or a item C.H.S. requested Diners, and Hamburger Joints to have On Hand to make the Chicken or the Side Dishes for the Smaller items He taught them to Cook while He spent the week showing them How to Cook. The Original Owner of the Edson Alberta Hamburger Ice Cream Stand said C.H.S. even Brough the Spices and Herbs needed to His Location and Showed the Original List of C.H.S. Spice and Herb list Needed. The Original Owners of other Location also said Yes He gave a list of Spices and Herbs to have on Hand. So are you saying we should drop the Coriander and crank up the Mace?

I have said for 2 Decade that Mace was part of the Original.
C.H.S. always said mace made Donuts the Best flavor ever.
Being a Deep Fried Greatness that Donuts were I always inquired to C.H.S. about the Mace in Chicken Dish His comment was its the Flavor in the Cooked Breading not the chicken that gives it the Extra special Seasoning.
C.H.S. Baked with Mace and also Nutmeg BUT Mace was On the Original Kitchen Photo NOT Nutmeg ?
Personally we use Whole Nutmeg and Get the Best out of Both the Mace and the Nutmeg.
But we use Mace Blade all the Time the Flavor is great. The problem is everyone goes to the Pre-Ground Mace or Nutmeg and its just NOT in the same Ball Park as Fresh Ground or Micro Plain Whole Nutmegs or mace Blade.

Cumin Seed Ground was the alternative in Butcher making but you altered the Amount
The typical way Butchers figured out the Ratio Difference was Trial in Ground Pork Fried and Tested to Taste as it was quicker to test that then in a smoked sausage.

Pastry Spice, also later known as British Mixed Spice. Long ago, and today, coriander was/is used in European beer making. The history of coriander moves to South America when the Spanish conquistadors introduced the flavorful herb to Mexico and Peru. Once there, coriander quickly became an integral ingredient in their chili and other dishes. CHS was once in Cuba. Very little of what we used in our bakery was available retail. What if it was the coriander that CHS threw into his seasoning between 1953 and 1956. The chicken I ate was in 1959.
Again, how can the 99x worshipers discount coriander when it is listed as an ingredient therein.

Cumin is oddly bitter and it can be dominating, but sources also mention a nuttiness. For me Coriander delivers a requisite nuttiness. And going back 2 years ago I was slightly throwing my own recipes off be adding anything greater than 0.10 grams of Cumin.
I'd have guessed Caraway Seed as what might have been used pre-Coriander Seed. I never would have guessed Cumin.
