Coriander is bright and toasty/nutty. Clean and citrus aroma. Cumin is dark and stanky. It has a B.O. aroma.

Its what the Butcher Litature showed for decades as a alternative item to use Coriander instead of Cumin other documents from spice companies suggested it also BUT NOT equal use exchange. Remember Smoking sausage gives different Profile taste results in the end and so does Toasting Spices or herbs or deep frying them.
Compared to Baking will show a Massive flavor Taste with items even between a Mace and Nutmeg Baking taste are Huge difference

I was not achieving flavor 'note' success until I boosted Coriander and added some Mace. As soon as I tasted the nuttiness from this combo I realized that nuttiness provides a major (if not 'the' major) pathway to the flavor note.
Primary 'note' pathway contributors: ------------------------------------------------ Nuttiness (Coriander, Mace, Nutmeg, Toasted Mustard Seed, others?) Zingerone (Ginger, and only Ginger) Eugenol (primarily Clove and/or Allspice) [Zingerone is molecularly a kissing cousin of Eugenol] Licorice (Anise Seed or Star-Anise or Fennel, or others?) Vanilla (Zingerone is said to highly resemble Vanillin, being sort of like a kissing cousin) Pepper (B&W, Cayenne, Tabasco, Shoagol oil from Ginger, others?) Salt (and lots of it, accept no substitute)
Edit: Note that IMHO Herbs are NOT primary note contributors at all. And neither is MSG...
Edit: When I tried 2 grams of Coriander Seed in 200 grams of Flour I was hit with a massive nuttiness overload. 1.5 grams works, but is sometimes bordering upon overload. 1.4 grams may be ideal.

the Original Kentucky Fried Chicken Pre-1975
Had distinctive Herbs visual in the Fried chicken it was NOT pulverized Powder blended into the Flour it was Specs and Flecs of Spices and Herbs
