No spice combination is going to come close to replicating caraway. Caraway is a very individual spice with unique flavours. Does it deliver the mild hint of a sort of licorice background? Not to sure, last time i used it i thought i detected faint licorice from it. Mixed up a new spice mix yesterday with perfect ratios and this time with celery seed and caraway seed. Strangely, all my spices and herbs seemed to have come back to life and smelt much stronger. You know your raw spice mix is good when you can smell it through the bag, next time going to jar it.

And although it is not an herb, it is very herb-like in this expression. I'm convinced that when Celery Seed is present at an adequate amount, other herbs are not even necessary. Somehow, to my senses at least, when Celery Seed exceeds a certain threshold it also enhances the expression of both Salt and Pepper, whereby when enough Celery Seed is present both Salt and Pepper will likely need to be reduced a bit in quantity. It is the only ingredient I've come across that seems to have this particular flavor enhancing characteristic.

Celery Seed is Unreal and has Great Flavor.
Don't Overlook Mustard Seed and Ketchup Spice as Flavor BOTH NOT overdone add a Plus.

I didn’t miss coriander last time I left it out

I've come across several internet sourced references that define the flavor of Coriander Seed to be like a blended combination of Caraway Seed, Sage, and a pinch of Lemon. No idea if the sources are accurate in this assessment.

No idea if the sources are accurate in this assessment. Sans that Coriander does not deliver the mild licorice character of Caraway. So perhaps more accurately: --------------------------------------- Coriander Seed plus some unknown quantity of Aniseed is somewhat like a blended combination of Caraway Seed, Sage, and a pinch of Lemon.

With the above in mind, it may be the case that when substituting Caraway for a combination of Coriander and Anise Seed one should slightly increase the Sage, and one should also add a pinch of something like Lemon Zest or Lemon Pepper.

Not an exhausted list. But I put together a list of companies and if I could find if they sold coriander in retail form in the late 30's or early 40's. As promised I am sharing my results. Hopeful if other's have more or have found results we can add to this list. Also, in most cases vintage spice tins are not exact dated but period dated.
Vintage Coriander tins circa 1930-40:
Griffith’s – N/A McCormick – 1940’s vintage tin 1 1/8th ounces Schilling – 1933 vintage tin 1 ¾ ounces Ben-Hur – N/A Durkee – N/A Sexton – N/A Tone – N/A Wadhams – 1 ¾ ounce cardboard box. Very old but no date (1930-40)

idk the date of this but seems the company was around in the 30’s. Can’t find a whole lot of info on them.
