Private Question Re 40oz Spice and Herbs Bags
When we used 40oz Bags of Spices and Herbs
This was the EXACT MIX
30lbs of Mixed Seasoned Flour with Salt and Milk & Egg Powder made Approximately 650 Pieces of Coated Chicken if you continually sifted the Flour. When New employees failed to sift the Flour it became Sandy Flour and you could ONLY coat 600 Pieces of Chicken or less. which kills the Bottom $ Line and quality.
The New Employees Failed to shake off Excess water from the Dipping Colanders and then would Dump the Chicken into the Flour Over Moisture causing issues especially if they let the excess moisture pernitrates the Flour
The MSG was Mixed into the 40oz Spice and Herbs at that Time Period
25lbs Flour
2lbs 5oz Salt
40oz Spices and Herbs
9.40z Milk & Egg Mix

I predict that about 18 ounces of the 40 ounce H&S bag will be Salt.

The 40oz Bags DID NOT list Salt on the Bag at the time we used 40oz bags. It Did List MSG BUT not Salt.
Salt was external box and bags.
There have been many mixes of Spice and Herbs in many different oz.
I have seen and used Bags of Spices and Herbs which did List Salt and MSG.
In the Above reference Posting I will again state SALT was External / Now if there was additional salt in the Bags of Spice and Herbs it was NOT 18oz that Spice and Herbs Bags DID NOT have that heavy of a Salt Taste.
Pepper, Sage, Paprika Heavy there was the MSG Yes but NOT 18oz of Salt.
currently Canadian KFC spice and herbs Bags contain Spices, Herbs, Salt, MSG 2021 / 2022 version 1 Bag
I hope this Clarifies better
Please understand that YES there are Bags of KFC Spice and Herbs which contained Salt also BUT I'm NOT discussing those in this post

Difficult to explain. We would have sucked the flavor through a straw if possible, like a delicious malt. I guess you'd describe it as a piece of meat with the collagen completely broken down, and emulsified with the seasonings. That is my end goal, and I don't care what it takes to get me there. But, if you use an altered cooking technique, and if you deviate from the "weights" that KFC used/uses, then the chicken will not be right. What always has stumped me about myself, and others on these forums, is that if you use the wrong amounts, and/or cook wrong, you abandon the project and go in another direction, as in following Glen's "musings". I wonder how many times we've been a knat's whisker away from the OR, then abandoned the project for things such as "vanilla".

the issue with Bags of seasoning Now is we use them ONLY to see what KFC has adopted as NEW Mix of Herbs and Spices.
Glen was Given a variation of Spices and Herbs From Scott Chicken Villa Company Family which was a 1980's VERSION NOT the Original Recipe.
The version was similar to the Pat's Famous Brand List they Had in the 1980's NOT the Original.

As to strict 40 ounce bag compliance, in conjunction with sane measuring units consistent with weight measure agreeing with circa 1940-1950 technology, this recipe might be moving us right close to the goal line.

Onion Powder Gives Great Flavor depth as I do Not see Onion on the Lower Recipe Onion powder has been recommend BY Many as a replacer for the Celery in many cooking situations
Celery, Onion, Garlic are 3 items commonly list be many packing places to the Questions asked by consumer's and NOT a mandatory requirement for Onion or Garlic BUT the CELERY is under Allergen
