Given how overpowering and ruinous Oregano can be to KFC clone recipes, I wouldn't consider adding more than 0.45 grams of official French 'Herbs de Provence' to a recipe built upon a base of 200 grams of Flour.
0.75 grams of Sage and 0.45 grams of real 'Herbs de Provence' would be about it for the entire 'Herbs' end of things.
As for anything other than official French 'Herbs de Provence', all bets are off.

We have been down this road before. The problem with using blends is the consistency. You’d have to buy from the same source and require them to adhere to strict blending etc. May work in real small applications but breaks as soon as you mass produce

I didn’t think that Herbes de Provence came online as a specific blend until 1970 at the earliest?

I agree with you that Herbes de Provence was a late entry to the Game of spice Sales in the USA I also cannot see when Sumac came into the USA and have searched import amount into the USE every year back to 1900
what I find interesting is C.H.S used Durkee's to package the spice ALL 11 they packages it ALL 11 and in the Year that they made the spices FOR C.H.S. they DID NOT sell Sumac or Herbes de Provence IT WAS NOT A ITEM they had listed for sale with the F.D.A those years ?
ALSO cannot NOT find ANY OTHER old vintage Tins Antique on the market for that years time period after Harland Jr Passed away when Durkee's Packaged the spices

That it is unlikely for either Sumac or HdP to be in the OR does not preclude them from our use in chasing the note of the OR.

It appears that the French only codified into law that Herbs de Provence must be (by weight) 19% Thyme, 27% Rosemary, 27% Savory, and 27% Oregano in the year 2006.
