Here is my resume. I think Star Anise only works in some contexts, it will not allow too much competition, no depth, balance or true complexity. Star Anise is too dominant and demands attention, center stage. If you don't comply, it will most likely angrily ruin your dish. Ken had to omit Ginger and almost all his herbs (except Sage) to make Star Anise work. It's not that I didn't like his recipe. I actually did. I know that you've tried at least one of my recipes using Anise Seed at 0.50 grams in 200 grams of Flour. Did you find it to be similarly problematic as for Star-Anise?

No, I think Anise Seed and Fennel are better options than Star Anise. Star Anise has a certain element that is off, it is lacking sweetness and tactfulness. I don't use any of them though. I'm in your camp as for Star-Anise being definitely 'off' somehow, but my wife consistently (across 2 attempts at least) likes the Star-Anise impact.

If almost 100% of people enjoy KFC OR, while perhaps 50% of people are put off by Star-Anise in deep fried chicken, while OTOH perhaps 50% enjoy Star-Anise in deep fried chicken, then it is not possible (in my opinion) for Star Anise to be an official ingredient.
Edit: Unless Star-Anise is kept below some certain by weight threshold whereby it becomes enjoyable to all...

I’m not using anise anymore either. But, if it’s there. I’d lean towards anise seed or fennel. They are more players in sausage recipes. Which he claims some ingredients come from.

The very reason we are spending years to crack the recipe. The well balanced indiscernibility. If that is the correct term. Star Anise jumps right at you in most cases and polarises.
