70 grams of MSG into 360 grams of flour would be 38.9 grams of MSG into 200 grams of flour.
But then it appears he is adding only 17 grams of salt on a 200 grams of flour basis.

Correction, 9.8 grams of salt into 200 grams of flour. 17 grams is for 360 grams of flour.
So he is completely inverting the salt and MSG. Wow!!!

Cheers, deepfriednew. But I think I need to correct myself. After seeing the napkin in HD, i noticed herb No. 7 looks strikingly like a bay leaf. It has this typical bending towards the tip on one side. Savory is usually depicted as a more longish leaf. I compared hundreds of drawings and photographs. Also, after researching more, I am now inclined to believe that spice No 6 are in deed cardamom seeds, and not star anise seeds. I think the citrusy, sweetish and fruity taste of cardamom is it. Star anise seems to be too strong and distracting in taste. Additionally, it is rarely ever depicted as seeds, since they always grind the whole thing. But I understand it would have been to easy to tell by its entire shape. So here is my updated version, which will be subject to some serious frying sessions next weekend. Dear KFC, just in case you're reading this and I got the 11 right, it is still time to stop me

You have a great eye for detail.
what I'm suggesting people do is then look at the cross reference to the Vials and the 2 photo pea-trays photos that KFC has released and see how they flow, The problem I see is Color difference it items at different stages of growth and powder items BUT it may help PULL out a SET number of MUST USE items.
I know everyone agrees on Salt, Pepper, MSG
its the other items and the amount of item that baffle.
is there 11 Herbs and Spices and salt, Pepper, MSG making it 15 total ?
Remember Bill S from Marion Kay looked at a Bag from the 1970's and went backwards to what was common in the 1935's time period. Eastfrisian you are a great master of the way you are doing your work.

I found an even better photo of the napkin in the meantime, which would definitely support No 7 being a bay leaf. With regards to the vials etc, I totally agree. There are huge colour differences within a crop, among brands, qualities etc, plus the oxidation. You will never be able to "read" the vials, though I believe in them. The napkin is a whole different dimension for me, far better than any photograph of any powder. If we take the napkin to be authentic, I am 99% sure to be correct. You even get exactly 5 spices and 6 herbs.

I have seen folks use cardamom before in recipes, also bay leaf.
How obtainable and common would Cardamom been in the 40's and 50's? Would it have been expensive or hard to get in the area of Kentucky? I just do not have any experience with that spice.
Excellent work so far! Might turn out to be one of the best clues

Flour 200g. Salt 32g. MSG 7g. White Pepper 2.00g. Fine Ground Black Pepper 1.5g. Coarse Ground Black Pepper 1.5g. Sage 0.70g. Coriander 0.60g. Ginger 0.50g. Basil 0.45g Garlic 0.40g. Bay Leaves 0.35g. Cardamom 0.30g. Cinnamon 0.25g. Nutmeg 0.20g. Marjoram 0.15g.

I wasn't really paying attention to the heart or v-shaped item on the napkin, until deepfriednew said it could be something. So I started researching and found out that savory leaves actually grow in whorls along the stem that look quite similar to what's on the napkin. If this was meant to be, the designer did an amazing job by placing them right next to CHS's head so people would mistake them for hearts.
