If 99-X was intended all along for zinging, then it may not have been a requisite requirement for it to fully bear within its formula the full essence of the 'note' itself. And it does seem that many of those who have tried it (Glen included) imply that it does not 'carry the note' (so to speak).
Short version: 99-X may be a note zinger, as opposed to a note originator.

The current problem as I see it is ONE MAJOR issue people are trying to make something with a impossible possibility.
26 OZ has been a COMMERICAL amount driven BY Brown & Massey.
Its a 26oz amount with EXTRACT based items NOT real spices SHOVE THAT 26oz Bag and 100LBS up a Stuffed Monkey Butt.
the wisdom to keep doing the same thing wrong over and over has been proven a STUPID THING.
The Spices from 1930, 1940 1950 1960 1970's STARTED to change Drastically
Learn about the Processing and Growing of spices it have changed like the processing of chickens
when ANYONE trying to make a recipe from the 1940's you have to do different Math to equivalate the difference.
WE have GONE backwards from natural grown spices and herbs of the 1960"s and earlier and the Processing changed MAJOR.
you cannot make the same Original taste unless you are using more spices to offset the poor quality spices.
Buying Pre-Ground Spices in package form NOW also is a weaker item then Clove, Seeds Stems, ETC ETC
using a Coffee Grinder at high speed and NOT pulsing the grind is a issue overheating the spices LOOSES the OILS
if your using the pre-ground spices you need to be at 35% Spices to Flour weight Salt and MSG excluded.

The zing of 32 ounces (scaled to grams) vs. 26 ounces (scaled to grams) is an increase of nearly 25% (on average). But certain ingredients may be getting zinged at greater than 25%, and other ingredients at less than 25%. That (per Glen) Sage is at near the bottom of Grace's ingredients, whereas Sage is near the top of 99-X ingredients means that sage is getting zinged a lot via a 6 ounce (scaled to grams) zing of 99-X into Grace's. And a similar sage jolting situation may apply to a 'standardized' zinger of 99-X when added to the official 26 ounce bag.

99-X would only zing KFC_OR (or Grace's) uniformly across all ingredients if 99-X was indeed a clone of that to which it was being added.

I seem to recall coming across a comment by a franchisee wherein a surprise visit from CHS led to 4 ounces of Ginger (from memory here mind you) being added to the LUG. And that after adopting this very same practice from that juncture forward, sales improved markedly. Thus 'Ginger only' zinging is an open possibility to be potentially explored.

If your most fond memories of KFC_OR are rooted in a restaurant which practiced zinging with 99-X, then you will never achieve your favorite memory of the 'note' unless you 99-X_Like mix zing your best homemade recipe constructed along the lines of conformance to the 26 ounce bag by ~23.1%.
(32/26 x 100) - 100 = 23.08%

If Glen is correct as to Grace's ingredients, then by my count there are only 7 H&S present. Am I looking at this correctly?
1) Various Grinds of White and Black Pepper 2) Allspice 3) Coriander 4) Ginger 5) Thyme 6) Sage 7) Marjoram
Shown in Glen's descending order by weight.
Is it possible that KFC_OR similarly uses only 7 H&S ingredients? And are they the same as this list?

I will say this and make reference to the Proof, which many continue to think does NOT stand the test of time The Famous Recipe court case set the Tone which holds until today. When CHS won the first court case against Famous Recipe that barred them from using more then 5 items excluding Salt, Pepper, MSG ALL court cases after that were agreed that the companies sued Like Marion Kay and Pat's Chicken Grace Blend. Were all forced to only use less then 5 or 6 item's NOT 11 Item's Bill S had spoke about this and Jim from Marion Kay had said they were forced to change the recipe. Some of the Staff at Marion Kay are not aware of the Fact but the Family is very aware of it. in the List above I can explain it better as many will say there are 6 item which is true BUT SAGE was NOT in the Original KFC it was Mexican Oregano so Allspice, Coriander, Ginger, Thyme, Marjoram In 1930's The Mexican Oregano was more flavorful then using the Sage and it was Cheaper in Price. NOW many will say BUT BUT BUT sage was said by the Secretary and Savory. Mexican Oregano was Labeled as SAGE KFC NEW AGE powerhouse forces ALL who they take to court either Get ready for a COSTLY lawsuit or agree to NOT use the 11 Herbs and Spices ONLY 5 or 6 Spices MAX WHY can't they STOP the Salt, Pepper, MSG - It's NOT in the 11 Herbs and Spices MIX so they cannot Bar those items. CHS Originally said he developed his 11 Herbs and Spices when he started adding items to his Flour, Salt, Pepper, he added the herbs and spices to it

So there are indeed 11 H&S, in addition to Salt, the various white and black pepper grinds, and MSG. Then I can comfortably put Orange Zest back in and still call it only 11 H&S. Is this correct?
