The left column is the line up in descending order that I use personally, and have been optimising for many months now. The end of my journey, 100% KFC note that makes the entire neighbourhood smell of it. To everyone with an honest interest in cracking the recipe I will repeat: These are the items you will need. I wonder if modern 99x contained garlic. Even in a salt form would it not need to be labeled?
I think jwoz testing detected some Eugenol in his modern 99x. So I’m not sure if those items are 100% gone. Like allspice or just driven to the basement as far an amount goes.

Is Ginger needed when Allspice is present? Is Allspice needed when Ginger is present?
Ken is exploring the former and finding success. No one to my knowledge is actively exploring the latter, whereby I've merely speculated of it.
If I conflate White and Black Pepper into one single item, that opens the door to bringing Ginger back in.

This is one of my recipes that I recently cooked. Meant to represent that Early 99x bag. Of Note: I round my recipes only to 1 decimal place as it won't change the flavor that much. So that's why coriander may seem out of alpha order. I used garlic salt but I am not sure if garlic was in it as it wasn't listed. And still isn't on modern 99x. I use 3 different types of black pepper. My family thought it reminded them a lot like the KFC we ate in the 70's For 200g flour 28g salt Early 99x bag from around 1976-78:
4.5g Pepper (Black 3g and White 1.5g) 3g MSG 1.3g salt (garlic) 1g Sage .6g Allspice .6g Red Pepper (50/50 cayenne and Paprika) .6g coriander .3g ginger .3g Thyme .15g Marjoram .15g Savory

I have corresponded with the major spice and herb companies who have been in the spice trade world from before 1930 They have indicated coriander was not sold as a individual spice in the 1930's and most of the 1940's it was in some Blended spices BUT McCormick, Durkee's, Sexton, ALL say they Did NOT market it in the 30's or early 40's Maybe a independent company had some BUT how Did it travel to Corbin ? ONLY because can't find 1030 spice tins to prove it was a individual sold item

With Ginger back in, as scaled to 200 grams of Flour.
200.g. Cake Flour 30.0g. Salt -------------------------- 2.75g. White Pepper 2.50g. Black Pepper (Medium Coarse) 2.50g. MSG 0.625g. Garlic Salt 0.625g. Sage 0.625g. Allspice 0.625g. Tabasco or Cayenne Pepper 0.625g. Coriander Seed 0.625g. Ginger 0.25g. Mace 0.25g. Nutmeg 0.25g. Thyme 0.25g. Marjoram
Sum = 12.5 grams below the dashed line

0.625 grams of Allspice is the 'nominal' Eugenol equivalent of 0.125 grams of Clove. By comparison, both Nutmeg and Mace contain small amounts of Eugenol. Nutmeg = 11% oil by weight, on a dry basis Mace = 15.3% oil by weight, on a dry basis 100 grams of Nutmeg oil contains 0.22 grams of Eugenol, and 0.14 grams of Methyl Eugenol. 100 grams of Mace Oil contains 0.15 grams of Eugenol, and 0.22 grams of Methyl Eugenol. I agree the Title may be 99x BUT this Forum is related to the Foundation of the Original KFC Colonel Sanders recipe NOT the Bill S Marion Kay 99-x recipe which may be similar BUT also different as C.H.S. Did Agree that Coriander (the extra item Bill S. added to the Original Season made it better) NO difference then when C.H.S. added the 12 element of M.S.G. formulation (which the employees of the Time Called a Confectionary Salt) Made the BEST chicken C.H.S. ever ate

Your logic is sound though I believe Garlic is part of 99X because MK indicate this in the description box for another product. This is why I added it to my Venn diagram as an approved ingredient. (Also approved by KFC Japan and some KFC seasoning bags) Garlic is absolutely important. More so than Marjoram or Thyme for instance.
