Later, when I fine tune the amounts of all of the relevant elements, I will make other extracts. I'm not so sure that the old KFC chicken didn't have herb specs on them rather than pepper specs. I think KFC moved away from pepper extracts towards herb extracts and needed the pepper specs back in the OR for appearances. Face it, there has to be a logical reason the seasoning bags, at various times, weighed 26, 32, 40 and 38 ounces.”
Smallgree, using the extracts, do you achieve the overwhelming aroma that is the hallmark of the KFC original? In the TEF cooking segment, were you able to discern anytime when he would have added the extracts to the recipe. If not, would he have already added it to the flour or oil?
In the manual instructions provided by DF101, the seal drop temperature of pressure cooker frying is exceedingly high. I would think that there is a lot of burning and denaturing of the natural oils of the spices and extracts.
Thus, the ratio of chicken, water content, oil amount must be carefully monitored, especially by the home cook who cannot fry in volume. Yes, the repeated use of the oil concentrates the flavor. The big question is if that alone is responsible for the aroma. But I remember the smell of the OR chicken emitted by the cold chicken. So, there has to be some other mechanism that creates the aroma. I’m more inclined to believe that it’s the extracts, moisture content and in addition, the repeated use of the oil.
Also, leads me to believe that the low temperature pan frying might be more accurate in recreating the OR recipe aroma.
It’s all about the exuberant aroma. Otherwise, it’s not the OR.

If you want A heavy Aroma leave the crackling in your oil over night and reheat the Oil the Next Day while stirring the oil and suspending the cracklin
then Pour off the top part of the Oil into a second pot to use for the cooking process and use the cracklin for the Gravy
the crackin in the Oil over night will have lots of seasoning which will aromafy the Oil
when you Heat the Oil people will think that your already cooking BUT your only heating the OIL.
PLEASE remember that the KFC Manual Temperature is FOR 5 to 6 lbs of chicken to be Dropped the temperature for 2-3LBS starting temp is reduced and printed in the Manual which are old

I'm running a series of recipes to select or eliminate several elements. I also want to acquire some curry leaf and see what it is. Then I will work in the extract. I'll cook it first, then later use it as a post fry shake. I want to simulate the flavor, not the process, at this point.

Hi everyone, i'm 99% finished with my recipe (last week it was 90% finished lol). I'll give yall one key ingredient.
Lipton Earl Grey Tea Bergamot.
Background I recently ate some of the uncooked part of KFC's chicken breast breading and tasted a strong floral cardamom like aroma. I says, its not cardamom and I says, I tasted this before, its bergamot!

Earl Grey Tea Bergamot. has been suggested many years ago and test lots in 2019
The Bergamot extract was tried and also dried tea from tea bags was cut open and poured into the flour.
The Tea does leave Black flecks on the cooked chicken
It makes A Great Chicken but gave a distinctive after taste which lingered
Others who tested it commented it may have been a items used BUT the after taste seemed to be a detouring factor of using the Tea

There was also many who tested Coco and other Coffee style items ?
I Did not have success with the coffee or coco based items
Some people have made a Liquid bath Dip like Fish Batter using Vodka as the liquid to flash off and Beer ?
Those just never seemed to compliment the chicken
REMEMBER back in the 1930 Tea was sold in Leave form and NOT Prepackaged Tea Bags so if ones trying the Tea trick Buy Fresh Tea leave and grind it to be more OLD Original to the 1930 method and some have suggested Brining the Chicken in a Tea ?

Hi Deepfried, I respect your opinion as head chef. However, let's be honest, many of us have tasted, smelled, and cooked countless herbs and spices in our lives. We already have a good sense of the ingredients used in a recipe. I trust my taste buds, and I know you trust yours.
Recently, I tasted a distinct 'zing' of lemony, floral, and herbaceous flavors, with a hint of marjoram and KFC's signature peppery note. I've already identified the lemony and floral notes as Earl Grey Tea. Colonel's Recipe is indeed full of surprises. I trust myself more than anybody in this world. Trust the tongue folks! Sayonara! I am very suspicious of anything "recently" tasted. This is where I usually request someone's age, not for attack purposes as some do, but to assess that person's views about whether they actually ate pre-corporate KFC or not. I have used tea, cocoa and coffee. I have neutral opinions about them.

I'm glad to see cardamom finally discussed. I've noticed two things recently about cardamom. As a paranoid man, I look for conspiracy and see what element we are directed away from. I've noticed on one internet site that converts gram/spoon measurements, that anything can be found...........except cardamom. Recently on these forums, an effort has been made to promote cardamom as a fruit, which means it must be removed from the vials. Must be something there.
Only non-paranoid people miss the possible signs that someone, or something, is concentrating on them, or are out to get them. This is what I taught my clients. If you even think that the cops are watching you, you'd better take it serious, because it might be true.

If you have mental health issues, please, get a shrink. Theres no way people here will have to deal with your paranoid episodes? Anyway, Im not trying to be rude but assessing people here through their age, if they remember the taste of 1950s-1970s recipe? is asinine. Heres a tip from a Gen Z, create a tiktok or instagram account name it “People who ate 1930s-1970s KFC original fried chicken” write a caption “comment down below what are the OG ingredients yall tasted, only 60-150yrs old are allowed to comment.” Getting scared of feds for a Cardamom vs Earl Grey Tea is crazy.
