Over the Decades the Flour changed BUT it was NOT all KFC NEW AGE or corporate change.
The flour Milling changed from Stone Wheel milling to industrial grinding which has changed the Flour from the Original style of Flour and the Growing of ALL Grains has also changed.
The flour even into the 1970 had much more potential for Bugs and chaff Now the preservative Kill all the Bugs and the Grinding mills any other left over ones as Protein ?
The Flour changed with NEW AGE KFC for a much more Crispy Coating obtained from Different flour and leveling agent.
The Original Chicken was NOT crispy it was a Pillow soft greasy coating
The new Age is the snap crack pop crispy which CHS hated.
NEW AGE KFC tried Mixing the Flour and Seasoning on more than one occasion and label it as one step flour ?
The Flour with the seasoning included from source was NOT as stable and If NOT used quick enough Lost to much flavor, The Oils Dry out in the Flour from the extracts.
The seasoning Bag are sealed in a Foil style Bag which keeps the extracts and the oils in the Herbs and Spices more vibrant than sitting in a Flour Bath
TRY Making your KFC SEASONING from ALL Fresh Herbs and Spices and slow speed grind the Fresh leaves and Onion and Garlic then Hand rub it into the Flour mixing the paste into the flour. YOU will have a total different tasting chicken much more infused flavor.

The past month I have cooked a lot of chicken, using many various techniques. All resulting chicken has been outstanding, which puzzles me some. Is it the way I brine or fry all of it? I've partially concluded (do you like that term?) that it is a basic mixture that I've been using on every cook. Garlic, onion, celery, paprika, white pepper, black pepper and msg. I looked today at the old KFC 100 gal seasoning drum and read the words upon it a little differently. If what I am thinking is correct, then we, the people, have been facing a great cluster f_ _ K ever since CHS's days. Here is the photo. i.imgur.com/ifj7YOC.jpgI've always wondered why a group of secret ingredients, fiercely guarded by all involved, was just given to spice companies, as if trust was a common human quality. And, I have wondered how no employee ever leaked anything they knew. The statement "they signed non-disclosure agreements" has never worked for me. The Corporation was not the government, and money certainly could have motivated a whistle blower.

When I get my pressure cooker, I believe I will have discovered the pre-1964 recipe. The greatest inspiration has come from the concerted effort to fool people with the Sexton Poultry Seasoning campaign. The ploy was to convince folks that Sexton's basically was close to the OR. What motivated me were the things obviously left out. From that I finally caught the flow of misinformation that has permeated these forums for years. This Glen/Grace's info is so off base, that I can't see any more positive information to be had from these forums. I'll post my research on the old BruseB forum from now on. These KFC forums are officially dead anyway. And those that are content with cooking modern, tasteless KFC chicken, well, they can revel in the Grace's enterprise.

I'm sitting down today and calculating a recipe that will be determined by a numerical formula, which was hinted at by various relevant KFC sources, and encompasses all of the floating bits and pieces of information that often contradicted themselves. A contradiction means only that, (1) one is absolutely false, (2) both could be absolutely false, (3) there is no guarantee that either is true. For dummies: 100% one is false; 50% the other is false; 50% the other is true.

There has been much question to the Volume of seasoning per Pound of Flour
while Salt was defined much easier in reference to 48oz salt to 25lbs flour
The NEW AGE KFC used many different Bag sizes over the decades 26, 32, 40 with salt or no salt
The original recipe was measured in teaspoons and Tablespoons Per 2 - 2.5 Cups of flour
while Many disputed many item like
Lots of Ginger which Tom S mentioned in Court and was never disputed BY KFC lawyers. They said the alternative that ingredients were MISSING
KFC has Documented world wide Celery, Garlic, Onion, Mustard listed in the Original recipe Dating back to the 1970's
IMPORTANT NOTE that I have continue to maintain They listed Herbs and Spices in addition to Celery, Garlic, Onion, Mustard which CONFIIRMS Celery, Garlic, Onion are NOT part of the 11 Vials or secret recipe Mustard was listed as a Mandatory Allergen and was Classified as a Seed originally and ground mustard was listed as spice lists provided by Spice companies or a yellow mustard as condiment The Botanical Mustard was listed as Pharmacy ingredient for Mustard packs.
Many contend that Mustard was NOT in the Original BUT the OLDEST allergen documents say otherwise that it was in the recipe and was NOT listed as a MAY CONTAIN which meant cross contamination was possible.
Now like Willie has said Grace's Recipe disputes some ingredients are NOT used as they do not used them ?

Logged in, I thought y’all had already figured it out. I think we already created the Colonel’s “Original Recipe”. The added “peppery note” was definitely introduced between 1950-1959. A business partner recommended improving the recipe, saying, “I want it peppery, Colonel. It lacks the taste of black pepper. I know someone who can make the black pepper more pronounced after cooking.” “It still includes your ORIGINAL RECIPE, Colonel. We just made the black pepper linger more after cooking.”

The Colonel DID NOT have business Partners ?
Before the Sale He worked alone or with employee who helped
The Only Person He Got advise from with Spice's was Bill S of Marion kay
Bill S comment regarding the Pepper was the Use of Tellicherry Peppercorns as Bill S Knew that The Tellicherry peppercorn were use when CHS developed the Original and By the Time CHS was with Bill S Most Spice companies were using the smaller peppercorns which NEW AGE KFC were using not just for cost saving BUT there were shortages of Peppercorn due to drought and ALL that was available was not as mature as peppercorns
KFC New Age had bulletin regarding the Pepper issue. They Increased the white pepper amount and used Pepper extract to mimic the Larger Peppercorn robust Flavor and aroma.
Bill S adopted the Tellicherry Peppercorn as He had contracts to the Larger Peppercorns
The currently cost of a High Grade Peppercorn Black extract is 70-80 Dollars a Ounce.
