I am on temporary pause, just when I am about to grab that greased pig, because all of my pressure cookers, and deep fat fryers are on the blink. Plus I can't find one single white peppercorn in the Tulsa area (I don't buy if I can't personally see, touch, or smell the product). I find that failure very suspicious (World wide shortage, my ass), just as I found it suspicious that the market has soon become flooded with "tellicherry" black peppercorns. Don't believe for a second that KFC's tentacles are not far and reaching. Glen's videos were intended (IMHO) to direct "us" to the later KFC taste of "peppercorns". They were intended to direct us away from the "11 Vials" which were developed long ago during the early to mid 1980s, shortly after CHS's death. The vials are legit and contain, not the OR, but the secret 11 herbs and spices. If it were the OR, then MSG would be present.

I do like the theory that MSG, Salt and W/B pepper are not part of the 11. I have thought about garlic being also outside.
Do you think garlic is a plus 1 or in the vials?

The key, which I have been unable to stir any interest in, is the phrase "11 spices and herbs". When was it first used, and I don't mean hearsay? Did the word "secret" originally accompany the phrase"? On a KFC seasoning bag, Salt, msg, white pepper, black pepper and garlic don't appear to be secret. On the TEF show CHS discussed the egg and milk wash, the oil, and Minnie Pearl, I believe commented on the fine flour. This could have been off camera, concerning the flour. Rumor at the time was that it was her recipe. Salt is the one item not often discussed in detail.

CHS made statement IN CANADA on Radio and TV Both.
He added 11 Spices & Herbs to the Original Chicken he made with Flour, Salt, Pepper. he clearly indicated the salt and Pepper were Table Salt and Pepper.
Refer to a Understanding CHS worked as a Lawyer and was Very Intelligent. CHS from the beginning Phrased Spice -and- Herb S&H but pronounced Herb "ERB"
he would have references Spice first as the Highest amount item in the 11 Mix as the FDA was a strong legal force in the 1930 and hammered BIG fines in those days. It was Brown & Massey who changed the Phrase the Herbs and Spices "H&S" for Labels BUT that was BECAUSE of LAWS of some Lands which indicated a Alphabetical order to items if NOT listed individually. The Jingle of Herbs and Spices flowed better then Spices and Herbs also.
In Canada CHS referred to Spices and Herbs many years after Brown & Massey changed the Advertisement. There was a Scott Villa commercial outtakes where CHS kept making a mistake in the commercial over S&H or H&S it was funny out takes and CHS was frustrated as they also wanted him to stand on the Bucket 20 Feet off the Ground and CHS was afraid.
Salt was NOT added into the Original 11 Spices & Herbs Recipe Vials. was always shipped in a separate BOX or Bag Originally.
Durkee's Originally blended the First Mix for CHS and Claudia after CHS Jr passed away They packaged all 11 Spice and Herbs in 1 bag NOT 2 bags it was 6 spices and 5 Herbs
The process of 2 companies making the spice or herb Blend was DUE to supply and excusive trade rights of import for some items. LARGE volumes LARGE volumes were not accessible from some suppliers. REFER to Bill S Marion Kay who said the world could NOT supply enough Tellicherry peppercorn for KFC supply from 1 country. Ginger was also a Product issue from Jamaica in Brown & Massey time.
Many have suggested that Vial K in the 11 commemorative vial from 1985 contains BLACK PEPPER. I have Maintained that K was more a Oregano (Herb) in the Vial BUT ONLY my Pick as a Herb item.
The Flour was Original a Tri Blend Wheat/Corn/Barely blend Primarily Hard Wheat in 1930.
CHS originally said he always has a Secret Blend of spices and herbs when in started to Franchise. Secret Term was COINED by CHS not Brown and Massey. This was even referenced by Peter Harmon. CHS ALWAYS said he developed the Secret spice before he found the Pressure Cooker. 1939 July he finished the 11 Spices & Herbs.
Many will say BUT BUT BUT there are some OLD bags of Spice which list Salt on the Bag which is true But the Salt was used as a Spice or Herb CARRIER at that point for the Oils of Spices and Herbs which Did NOT flash burn like Raw items.
Old KFC manuals list Salt at 1oz per pound of Flour ratio.

I have guessed Oregano as a Vial K when many have said it was Black Pepper.
we have tried to Purchase Better quality photo's of the Vials From Brian B who has the copyright to the photo BUT will not sell others except the ones released BY KFC ?
in the photo's we have of the Vials there is a grind difference with Black Pepper and Oregano which is noticeable if you grind at a 10-20 range. There is a color separation also which Oregano has different then Black Pepper.

I was always a vial K is most likely pepper. Having not put much faith in the vials or time. But admittedly after reviewing and playing around with the image. It appears more likely a herb that hasn't been ground fine. Whether it is Oregano or Marjoram. @11serbs feels it is cardamom. Either way it does seem not to be pepper.
