Amazing find Deep Taste! Indeed, more Black Pepper than White Pepper. I wasn't expecting that!!! Also loads of oil and water emulsifiers. (E450, E451, E452) I believe emulsification is the means to pushing the note into the 'dry' (so to speak) pieces. Most of the non-North America world uses Palm Oil. It is the most used oil in the world. E535 is (believe it or not) Sodium ferrocyanide. I think Celery Seed said bye-bye in the early 70's. Using it depends upon what era of KFC you are trying to discover the note for. That and your allergy tolerance.

It's getting more and more difficult to hold the line at 11 H&S. And now we have to add Mustard. Do you think they are using Mustard Seed (a spice), or dried Mustard Greens (an Herb)? I'm guessing the seed (ground or powdered of course).

I think it is Yellow Mustard Seeds.
Celery is a great spice, and KFC is using it till now in its Gravy almost everywhere I have looked, I don't think they will remove it from the Chicken and keep it in the Gravy, but that is just my opinion.

DT A point well noted! But a circa 1970 UK Allergens report (which I have posted) said: Mustard: Yes Celery: Yes So variations in ingredients may be a regional to national thing. I'm going to have to revert back to Coriander Seed and see if I can achieve results on par with those I've experienced for Celery Seed.

An odd thing I've noticed is that Salt level for Salt level, my deep fried Chicken seems a bit more salty tasting when Celery Seed is present than it does when only Coriander is present. This might just be part of my confirmation bias though.
