As long as you are not allergic to Celery, this recipe is guaranteed to satisfy. My Wife's favorite non-KFC recipe was essentially like this, but I've ramped up the pepper here in keeping with current trends, and I've reduced the Celery Seed also:
200 grams Cake Flour 28 grams Flour Salt 15 grams MSG 3.5 grams White Pepper 3.5 grams Black Pepper 3.5 grams Celery Seed 2.0 grams Dextrose

It's that good. Full disclosure: We originally made it with 4.5 grams of Celery Seed and 1.5 grams less pepper. It was a bit over the top on Celery and a bit lacking in Pepper by my taste buds, but nigh-on perfect per my Wife.

Off topic but I’ll toss it in
If mustard and celery and garlic have been listed in various countries as allergens in OR. And you believe black and white pepper where counted as individual ingredients.
Wouldn’t be hard to see:
B Pepper 1 W Pepper 2 Mustard 3 Celery 4 Garlic 5 And the all popular Paprika 6 Ginger 7
Gap gets smaller

Mustard has been bounced around in and out of recipes BUT for some reason Ken's Forum threw it out and said NO NO NO.
They were sent Canadian Information to Post about Mustard and Celery in the 1970's Canadian Tray sheets Liners Kentucky Fried Chicken used which showed Both as a item. Ken was more concerned to show a Allergy Medical Report then The Tray Liner. Medical Hospital Records in Canada are a sacred Personal Document and they Do Not take lightly to releasing Medical reports of Third Parties back in the 1970's and the Documents were NOT showed.
BUT the Tray Liners were showed and It did not get posted?
Double Fine Mustard was the Spice commonly used in powder form. Celery Seed was The Spice Placed in the 18 McCormick Spice Rack and other Spice Bottle sets.
GREAT POSTING and THREAD

Except it should have said on line 5:
5) Coriander Seed (or) Celery Seed

My only caution would be the amount of Paprika. Not saying you are wrong. But in the 200g version I just mixed I was planning on 1g paprika. and when I measured it out. There just seemed to be so much of it volume wise compared to the other mixed ingredients. So I chickened out (LOL), and dropped it to 0.5g. I can't remember if you have used that much before.
I think I could try 1g next time though just to see

Great find, definitely going to be adding mustard back in for tonights recipe. Celery seed works so good in chicken that it makes no sense why the Colonel wouldn't use it, it almost ads something magical to the way the spice mix smells when you use it. If celery seed isn't in the modern recipe then it's also my belief that it got replaced with coriander.
