Mustard & Celery were listed on the 1970 Tray liners as Allergen's BOTH

A fine line. But on the tray liner it states "May contain". On the Allergens from Italy and I believe Africa. They listed contains mustard.
I do however think that at some point both may have been there. Not now in Canada or US for sure because of allergies etc.
I posted this on another site. I think there are some basic era's you can put on the KFC recipe you are working on.

Understand at the Printing of the Tray sheet time the C.F.I.A. allowed the Term May contain if lower levels were used in the Recipes.
2022 / 2023 THAT IS NO LONGER THE CASE
ANY fly speck of ALLERGIN MUST BE LABEL if intentional added to a Recipe (May contain ONLY allowed if the spice milling company has used the equipment within a set time period may have residual cross over contamination)
May contain is NOT a safety net for the Spice Companies any longer and they will be shut down for inspection ONLY IF A COMPLAINT IS IN WRITING TO C.F.I.A.
again at the printing of the Place mat Trays They had and were allow to Add the item and list it as MAY CONTAIN but that's 50 years ago in Canada. Other Countries have always made it a Mandatory listing and Do not have a may contain clause

If you believe in the vials and that they are single ingredients. Then place the ingredients in it mustard and celery seed.
I can place ground celery seed. But not mustard. If I do garlic or Jamaican ginger go

The Vials ONLY contain Herb's and Spices K.F.C. NEW age Claim Celery, Onion, Garlic are NOT a Herb or Spice ? so If K.F.C. has Celery, Onion, Garlic in the Vials ? GAME ON K.F.C. False advertising You can't sell a 11 inch sub either and call it a FOOT LONG ? Misrepresenting in Print is a Potential Liability risk. PLEASE understand Just because K.F.C. says 11 Herbs and Spices original recipe it DOES NOT MEAN they cannot have ad on outside the that Make up the seasoning Bag? K.F.C. ONLY had a limited Run of BAGS which listed vegetable on the Bags and when they were used up they changed the Bags labels to be printed different ?

How Do you explain the Labeling KFC NEW AGE has made for allergens ?
or Do you think K.F.C. New Age used Mustard as a replacement for another item over time?
Please contribute your Understanding and Opinion, it's always informative and Great and everyone else PLEASE comment as to MUSTARD ?

The allergens reports say "may have", not "do have". This, I believe, is to cover legal liabilities for a facility that uses mustard in other products made in the same factory, and perhaps with some of the same equipment. I believe East Frisian has covered this.

On bonappetit.com, the flavour of fried mustard seed is described as "floral with a vanilla undertone". That makes it really interesting. It is also an item people used a lot in the old days, so it would not be far fetched to assume it was an ingredient for CHS. However, I really hit the note without any mustard at all. So my very current stance is, that it may well have been one of the 11, but I doubt it plays any role in creating the note.
Here is another thought. Why would KFC omit a rather cheap OR item from the formulation to accommodate allergy sufferers, when they actually do use mustard seed (and celery) for the Zinger and the crispy version? This does not make sense. If the thought was to be as inclusive as possible, they wouldn't use any of these ingredients at all. Maybe not even sesame.
So I believe the Corp rather omitted Mustard because they did not need the extra heat with the emerge of pepper extracts and more potent colouring agents like Turmeric?
I am open to give mustard another chance though.
