I took what jseo12 said into consideration, and for the recipe i mixed up just then, my only herbs are Sage, Marjoram and Thyme. I tasted the marjoram today and think it might work better than the oregano because the marjoram seems to be a more savoury milder flavour.

I believe clove is part of the original recipe. Maybe use 1/8 Tsp in 2 cups of flour? Also, marjoram is more likely than oregano since oregano isn't well known in the past. I also think cardamom is present because it's known in one of KFC ads picture. I am also starting to see that there are multiple ways to get to the same or very similar taste profile. If you use Silver example with clove, nutmeg, cinnamon and mace. You may be able to get a similar and very close taste profile with Allspice, Nutmeg and Cardamom. And it's also how these work with the rest of your ingredients. This makes sense as of the stories of CHS making KFC in peoples kitchens with what they had or buying an arm full of ingredients from a local store. He knew how to substitute each flavor block. Making it even harder to land on "the 11" if that was even the right number.
Probably the best we can do is once we have a recipe we like. Is to start looking at substitutes to see if logically we could work it down to 11 fairly mainstream ingredients at the time.
A few of us seem to be getting closer on our use of salt, pepper, ginger and a couple other ingredients. So we may be able to between us, narrow in on some of the others.

flg I agree with you BUT finding the Spices which were available in the 1930's as substitutes unless you want a NEW AGE KFC then anything Goes.

Just got done pressure frying my latest attempt ( first time pressure frying in years ) and WOOOOOOOOOOOOOOOOOW!!! the changes i made to my recipe coupled with the pressure frying, i can now confidently say i have 99% cracked the recipe!! I can now see that pressure frying is a huge factor in achieving that greatness, it really does make a huge difference to the flavour.
Also, i used to pressure fry in a wearever chicken bucket which is a low pressure fryer (around 5 psi) this new cooker i got can go to about 12 psi and that extra pressure makes a big difference.

6L scanpan. only thing i don't like about it is that it's too slow to release the pressure.

Giving out a full recipe with ratios would be giving all of my years of hard work for free. I will however share the ingredients which is pretty much the same as it's always been 1.Pepper (black/white) 2. Garlic and onion 3. Sage 4. Marjoram 5. thyme 6. cayenne pepper 7. caraway 8. fennel 9. ginger 10. cardamom 11.nutmeg 12.allspice Random order^ I highly doubt anyone who has cracked the recipe, and i mean truly, truly, cracked the recipe would ever give it away.

If you were given the actual official recipe by kfc themselves and couldn't figure out the ratios for yourself, i'd say you are not very good at this.
