Coriander Is a Item I have said 101 Times I cannot Purchase 1930 - 1940 Individual Antique Spice Tin's on the Market
So if they are NOT available for sale and I can purchase other 1930 - 1940 spice Tins it tells me one of two things it was NOT available or it was VARY Hard to get otherwise I could purchase it on the Antique Marks scene and I have asked the Antique Auctions to Always inform myself when they are selling antique Kitchen items
In 50 Years I have NOT NEVER been able to Purchase a 1930's - 1940's Coriander Spice Tin I have been offered Many Tins which are 1950's and 1960's spice Tins which people said were 1930's BUT were proven to be 1950's and 1960's BY TIN Material and Logo Design from the 1950's and 1960's
ANYONE having a 1930's and 1940's Coriander Spices Tin I have OFFERED a REWARD FINDER FEE for 15 years and NO ONE has ever collected the Reward Fee as NO one has found a 1930's coriander Tin .

I think based on some cooking that for any given recipe the amount of Celery Seed used would be more than that if coriander was used. In the neighborhood of 2x the amount. What I haven't worked out is where caraway seeds sit in ordering. Closer to the higher amount of celery seed or lower amount of coriander. Celery Seed and coriander aren't 1:1 as far as I am concerned.

I may attempt to give Caraway a second chance within a recipe such as this one, but I still have my Recipe #16 melding and waiting to be cooked first.

The import of Coriander Seeds in 1930 is well documented in the Tariff Act of 1930. I agree it surely wasn't a common item, but we cannot say on the one hand that CHS was a spice master and on the other that he must have been ignorant of Coriander Seeds. I am sure that if he wanted to try or add Coriander Seeds to his recipe he could have gotten ahold of it. Sooner or later. Coriander Seeds are even mentioned in the Bible.
It is possible that Coriander Seeds replaced Caraway. But has anyone already asked why? Can't really be lower costs? Also, personally, if the story of adding Coriander much later is true, then it would still be way before my time. So the only KFC I have ever eaten as a rather young lad will be the coriander seed version I guess, which makes it less appealing to me.
I have replaced my Coriander with Caraway in recipes and it worked fine. No revelation though. But I must admit it was one of the few spices I only have preground. Will get some whole seeds and compare again.

Will get some whole seeds and compare again. For my combination of herbs and spices caraway was by far the biggest revelation i have had. I don't think they replaced coriander with caraway because i can still detect it in modern O.R. Caraway is one of the distinctive flavours in the O.R and is one of the heaviest spices after ginger. Caraway is very distinctive in it's flavour and what it does to the note. You cannot replace caraway with coriander, completely different spices imo.

I’m glad you mentioned this . I was doing some recipe rough in yesterday and if I used caraway it would slot right in behind ginger. Currently I am running about 1g ginger into 200g flour.
Increasing Ginger was an aha moment for me last cook.

I have always been behind Ginger Use and Viewed the Story about the Franchises adding Jamaican Ginger. Saigon Cinnamon has always been in some of our mixes. Bill S from Marion Kay CHS always SAID they had the BEST Cinnamon and Ginger ? ? ? CHS seemed to enjoy all types of cooking and not just fried chicken, so him saying "they have the best cinnamon" doesn't necessarily mean that he was referring to his chicken recipe. I have wanted to make cinnamon work but it just doesn't seem to work or do anything for me? Am not finished trialling cinnamon but so far it doesn't work for me.

I know many seem to want to discredit what they said: BUT THEN IF you challenge and discredit there Taste test then ALL posted Independent Taste Test From the Top to Bottom of Everyone Posting is NON VALUED or Irrelevant.
Just so you are aware when CHS spoke about the Cinnamon and Ginger He was always running down NEW AGE KFC and speaking about His Chicken YES it Could have been NOT related to other recipes BUT it might have NOT
Cinnamon is used in many Spice Blends from Pumpkin Spice, Apple Spice Blend, Cake Mixes and BBQ Spices and I will say they seemed to make the Blends work and NOT over power the Blends
I will agree its a Hard individual item to fit into recipes BUT think a Lower level amount when mixed with a higher amount of Mustard or Ginger may blend
In our current chicken we are throwing EVERY OLD amount level out the window and basing it on PURE Spice Taste ORGANIC and some of the most powerful spices
