These are the herbs and spices that i have narrowed down to being in the recipe
Pepper (white and black) 100% Cayenne pepper 100% (have tried ancho, i prefer cayenne) Sage 100% Garlic powder 100% Oregano 100% Savory 100% (or thyme) ginger 100% Allspice 100% Nutmeg, mace, or cardamom 100% Celery seed or coriander 100% either one of the two Aniseed (still trialing this one, but so far im impressed)
Whenever i stick to these ingredients I always feel like i'm on the right path and getting very close.
Others herbs and spices i think might be in it
Rosemary (too strong and overpowering, smells like lavander)
Onion powder (but we have garlic, which is similar so why use both)
Basil ( don't like it personally, smells like tea bags) Thyme Marjoram bay leaves (not too sure, i view this as more of a tree leaf than a herb) Mustard (not too sure, it works ok but doesn't seem to do much for me) Cloves (too strong and bitter imo, allspice works much better)

BUT that is a New AGE KFC Well i'm still open to the possibility of rosemary being in the recipe even tho i don't really like the smell of it on its own. I could see how in small quantities it could pair well with the other herbs and ad alot of aroma to the cooking chicken which is what its famous for "you could smell it far away" so the fact that the aroma was so strong we really should be looking at strong odour emitting herbs like rosemary.

I also think people need to give nutmeg and anise (fennel, aniseed,) more trys. i'm honestly amazed that so many people don't seem to use nutmeg when it ALWAYS brings my recipes much closer to smelling like kfc. You have to also look at it from the Colonel perspective, when he was creating his recipe he would have been just like us, experimenting to see what works and what doesn't well anise and nutmeg work very very well.

In a New Zealand Video the interviewer comments, KFC confirms Pepper, Rosemary, Thyme and Oregano? BUT that is a New AGE KFC The guest stated that he detected 5 items, with one being Rosemary. KFC said he got only 4 items correct. Rosemary is not confirmed at all. It smells and tastes like pine and it overpowers the other spices, so if one is to add it, my advice is to make it last on the list by weight. It isn't likely to be in at all, but if you like it you are free to add it. I think the list which Chickenman came up with is pretty much spot on. I like Rosemary on Steaks. I want to try it in a Chicken coating. But I very much doubt it is in the 11.

Forgot to mention that i also believe the black pepper should be on the coarse side. I have 100% many times eaten modern O.R and crunched into some coarse black pepper that released an explosion of black pepper flavour. I also believe when black pepper is ground fine it blends together with the white pepper and ruins it. The black pepper imo, should sort of be seperate to the white pepper and stand out on its own. The white pepper works better on its own mixed up with everything else.
This not only makes sense and is logical to me, but have actually experienced when eating kfc.

What sort of ratio do you prefer between B&W Peppers? I always experiment with the ratios, when i used to use ground black pepper i would prefer less black pepper to white pepper. With coarse black pepper i'm thinking could do equal amounts or slightly heavier on the black pepper because when the black pepper is coarse i feel like you lose some when you eat it and need more to make up for that difference.

I want to try it in a Chicken coating. But I very much doubt it is in the 11. I don't think KFC is being serious or truthful in the NZ video. However, the video on its own does confirm Rosemary. The guy had his last guess wrong, milk powder, hence the wrong answer sound and the positive sound for the previous items. I have tried recipes with 6 "proper" herbs incl. rosemary and it worked perfectly fine as long as you stay within a certain total amount of herbs. Rosemary and Sage do have similarities, so Sage needs to be reduced in any case. In my opinion, people use far too much Sage. No wonder any other strong herb added would taste off.

Let's pretend the following ingredients are 100% in the O.R and that black and white pepper is counted as a single ingredient, what else would you ad?
1. Pepper (black and white) 100% 2. Red pepper (cayenne) 100% 3. Garlic powder 100% 4. Ginger 100% 5. Nutmeg 100% 6. Sage 100% 7. Allspice 100% 8. Savory (summer) 100% 9. Oregano/marjoram 100% 10. Coriander or celery seed 11. fennel/aniseed? caraway? cardamom? mustard?
The only ingredient that makes sense to me is fennel/aniseed. Problem is, fennel and aniseed just dont seem to ad any "anise" flavour to it but star anise does. Either i need to change the ratio's of the other ones to allow the anise to be more noticed or anise is simply not in it. Btw, after spending 4 years on this i truly believe those ingredients to be 100%ers.
