CONTRARY to NEW AGE KFC Public addressing that 2 spice companies made the 11 Secret Spice and Herb mix is PURE CRAP AND BS.

THEY ALL HAVE THE FULL RECIPES YES they were using multiple Bags for the seasoning.

THE reason is ONE VERY VERY SPECIFIC reason ONCE ALL THE PEPPER is mixed and stored with the other spices for a extended period

YOU WILL ONLY have a ALL PEPPER SEASONING / THE PEPPER OVER POWERS all the other spices.

1 Bag was all the Pepper Aspect Spices
1 Bag was all the spices Non Pepper


Do This experiment add Black and White Pepper to a Mix of spices Floral and otherwise seal the Jar Bag what ever. it diminishes the Other Flavors compared to a fresh bag. Yes there will still be a under tone of the spices and herbs BUT way out factored by Pepper. BUT the OVERALL AROMA of KFC will be through the ROOF upon opening the Jar or Bag.

As for how can the Method work for a 26oz or 40oz BAG vary simple the Spices are Mix with the 100% Method use of 20 18 13 11 11 10 6 4 3 3 1 and then 2oz of additional spices are separately mixed to there own 100% Value added in the 26oz bag making it a 26oz Bag ETC ETC ETC.

OH it works the same if 2 Different Spice mixers have 2 different 100% Amount and add them together The two Mix bags then make a 100% Mix and when you divide out the 11 Spices it changes the Over all % of the 11 items BUT the formula is still a 100% value.

THE use of a 100% formula is used for multiple reasons and catching error and omissions is one way.

Why permit a single degree of freedom in scaling whereby to blend spices. And in so doing eliminate hundreds to thousands of other potential degrees of scaling freedom which may lead to a better tasting and therefore more widely sold and purchased spice blend. It makes absolutely zero sense.

11serbs I will maintain the Principle I have said FOR a long Time that Portion Cups were used in the Original Recipe Claudia used Portion cups and the 11 items when measure with portion Cups makes a 100% value. As for scaling it goes way back It was spoke about with the old groups BUT they kept scaling ALL the items to 100% and that's NOT the way it's intended to be used. I think if you looked to old Forum recipes even started with 32C They calculated the 100% scale BUT did it wrong. I think Ken's Group spoke about it for sometime and Some said it did not work.

In the Last 2 years because of covid and shipping issues and Spice and Herb shortages. The formula's have been changed and made to different proportion's. These values appeared.

400 - 360 - 260 - 220 - 220 - 200 - 120 - 80 - 60 - 60 - 20 = 2000Lbs.

5 - 4.5 - 3.25 - 2.75 - 2.75 - 2.5 - 1.5 - 1 - .75 - .75 - .25 = 25Lbs

I Do Not care if any one wants to pick it apart or discredit the values and the amounts everyone is fair game to do that.
