4 grams of Garlic Salt in 200 grams of flour seems to be the only means whereby to achieve a nominally proper 'overall' level of Salt while both scaling the 11 H&S to 20,18,13,11,11,10,6,4,3,3,1 and scale complying with the 40 ounce bag. This means garlic salt is now firmly established at the very top of the 11 H&S list.

I do think this is the most realistic way of using these numbers. The other thing I liked is that pepper is about where I am at in my current recipes. I was heading towards this if MSG was included:
4g MSG 3.6g White Pepper 2.6g Black Pepper You will never achieve 28.5 grams of salt if you see it this way.

A Garlic Powder will achieve More Aroma then the Garlic Salt.
If you want to hit a AROMA NOTE DO NOT USE Garlic Salt it is NOT CINCENTRATED high enough for a SMELL AROMA NOTE.
Leave the Salt to the Salt Job not a Combination Garlic Salt.
CHS OLD recipes USED GARLIC EXTRACT NOT Garlic Salt and Fresh Garlic.
Please DO NOT Mix ALL your Spices a Grinder high speed unless its being used for a Marinade.
Pour the spices into a bowl and fold it together to Mix wooden Spoon or Metal spoon even a whisk BUT not high speed.

If you are Using a Coffee Grinded to Pulsate Seed or Peppercorns
Clean the Grinder with salt and Pulsate it to clean the Blades and Cup, Dual function cleans the grinder and Infuses some salt, into a powder also
Then use that infused salt in your Gravy or mix.

If you notice, my scaled to 20,18,13,11,11,10,6,4,3,3,1 as percentages recipe(s) contain no MSG. Was CHS rattling off to Winston Shelton his real original recipe scaling he used from back in 1940? If so, then it is highly likely that there was no MSG in it. The real (as in original) recipe didn't have any MSG.
To make room for MSG, along with shrinking the "bag" to 26 ounces, requires that about 1/2 of the ingredients be replaced with extracts.
Otherwise:
200g Cake or Pastry Flour (external from the bag) 24.g Salt (external from the bag) ---------------------------------------------------------------------- 4.0g Garlic Salt (1) 3.6g White Pepper (2) 2.6g Black Pepper (3) 2.2g MSG (4) 2.2g Mild Paprika (5) 2.0g Coriander Seed (6) 1.2g Ginger (7) 0.8g Allspice (8) 0.6g Ancho Pepper (9) 0.6g Sage (10) 0.2g Savory (11)
Notice that 'Glen' waffled as to the correct position for MSG, but his hands were pointing at this general location while he waffled. He also said that he was troubled as to presenting episode #10 without revealing too much of what he had actually learned. And this recipe downplays Sage, just as for Glen's episode #10. The big difference is that where I placed Savory he placed Marjoram. And where I placed Ancho, he placed Thyme, whereby he didn't use Savory. Both Savory and Thyme contain Thymol, with Savory having less. And the Chinese analysis found little Thymol.

If the 0.6 grams of Sage was to be replaced with Mexican Oregano (also known as Mexican Sage), then ... ?
Would it at 0.6 grams have an overpowering Oregano nature?
But at least it brings back the Oregano/Marjoram flavor.
Perhaps move Savory to 0.6 grams and place Mexican Oregano in the 0.2 gram slot as a means to resolve this dilemma. And eliminate common Sage altogether.

The Recipe Glen is Showing was a 1980's recipe.
The way the items were listed are NOT a perfect way it was to be listed, and Does NOT contain ALL of the Items in the Original KFC.
That recipe was one of recreations of Limited items
The Old Recipe Listed the Items in this format
Fine Salt Fine Ground White Pepper Fine Ground Black Pepper Coarse Ground Black Pepper Cracked Black Pepper MSG Ground Coriander Plus 1 extra Item the Bill S Marion Added Allspice / or / Summer Savoury Ground Ginger Rubbed Thyme Ground Sage Rubbed Marjoram
