The Formula was used in Kentucky Beef Restaurant's. It matches Shelton's Numbers and also another Source who Owned Kentucky Beef Restaurant's Current KFC NEW AGE KFC are using a Washed Paprika in the Recipe which is screwing with everyone who has looked at KFC Spice in the Last 2 Decades, and Do Not see the Brilliant Red. That was Part of the Original Spice and Herb Blend between 1940 and 1978ish Ask anyone who used the Original Marion Kay Chicken Seasoning Prior to the Court Case it was also a Dominants Red Color. 20 18 13 11 11 10 6 4 3 3 1 Non Washed 20, 18,13,11,11,10,6,4,3,3,1Recipe Mix which needs one further Grind.

My radical thought on this one. What if these numbers were for 1kg of flour. Therefore we could easily work them back to percentages for any flour amount.
Example: For 200g flour it would be
2.0 % of 200 = 4g 1.8% of 200 = 3.6g 2.6g 2.2g 2.2g 2g 1.2g 0.8g 0.6g 0.6g 0.2g
Apply percentage to any flour amount

As a bonus it is a perfect scaled match to the 40 ounce bag. flg appears to have made a very huge breakthrough here. deepfriednew101's number scale is not denominated by weights, but rather by percentages. Each number along the scale is a percent. Summing to 100 percent (as opposed to summing to 100 grams). Where Winston Shelton misled all of us by saying "grams", if he had instead stated "percentages" this all would have been obvious long ago.

And (as flg has already stated) each percentage is a percentage of ones chosen weight of flour. There is no need at all to presume that Winston Shelton was ever even told by CHS how much flour to use. CHS had no need to even mention it.

Per McCormick, their Garlic Salt contains 490 mg. of Sodium in every 1.4 gram serving.
490 mg. = 0.49 grams.
A salt molecule (NaCl) is 39.337 percent Sodium and 60.663 percent Chloride by weight.
0.49/0.39337 = 1.24565 grams of NaCl (Salt) in every 1.4 grams of Garlic Salt.
1.24565/1.4 x 100 = 89% Salt
That means 11% Garlic Powder.
So the nominal Garlic Salt is about 89% Salt and 11% Garlic Powder.
We know that around 28.5 grams of Salt are required in a recipe scaled to 200 grams of flour before its saltiness roughly matches KFC by the measure of our taste buds.
89% of 4 grams is 3.56 grams
24 grams Salt plus 3.56 grams Salt = 28.56 grams of total Salt.
Therefore:
200g Cake or Pastry Flour (external from the bag) 24.g Salt (external from the bag) ---------------------------------------------------------------------- 4.0g Garlic Salt (1) 3.6g White Pepper (2) 2.6g Black Pepper (3) 2.2g Mild Paprika (4) 2.2g Coriander Seed (5) 2.0g Sage (6) 1.2g Ginger (7) 0.8g Allspice (8) 0.6g Ancho Pepper (9) 0.6g Savory (10) 0.2g Marjoram (11)
Everything below the dashed line is in the "bag". It sums to 20 grams, which perfectly scales to a 40 ounce bag.
If this (or something very close to it) does not evolve the note we might as well all give up on 20,18,13,11,11,10,6,4,3,3,1.

I have chirped 99x Times that the % of 100 was usable in every formula with Grans Ounces, cups and weight measurement. of Flour
Every Spice Maker uses this formula for 100 Years.
I even wrote that Bill S Marion Kay Daughter said why is it 99X and Bill indicated because He was 99% of the Spices in the Original Recipe. NOT 100%
The Recipes which are NOW finding the Perfect Pepper Ratio first is the Best Start going.
Yesterday a First Timer Chicken cooker made Perfect tasting chicken and said the House was a KFC Aroma Zone.

Home Electric Table Open Deep Fryer Chicken was NOT cooked in a Pressure Cooker. 360 Start cook Drop turned down dial to 300 before the Chicken was Dropped. Flour and Corn starch was used for the flour Base. We cooked a Golden Brown Chicken as per the Family request. White Pepper and Black Pepper seated the High % of the Ingredient Sage and Savory were also high with the Herbs. Garlic and Onion were the equal amounts. New Only was used and citric acid was added to the OIL / helped with Aroma the Oil was a blend of Vegetable oil and Beef Tallow 75/25 Higher then Normal Mustard Seed was used to obtain the Golden color. All Herb were Rubbed Herbs that were pulsated in Coffee Grinder. Salt was a Diamond Salt which was Pulsated to a Flour and MSG added. Salt was to Taste

I do think this is the most realistic way of using these numbers. The other thing I liked is that pepper is about where I am at in my current recipes.
I was heading towards this if MSG was included:
4g MSG 3.6g White Pepper 2.6g Black Pepper
