As of my real KFC sniff test, and keeping my 5 must have's based on that. This is melding for either a Wednesday or Friday night cook For 200g Flour and 28g Salt 6g MSG 4g White Pepper 3g Black Pepper (1g fine, 2g cracked) 1.5g Garlic Salt 1.5g McCormick Poultry Seasoning 1g Celery Seed - Silver 1g Ginger - loading up the ginger 0.5g Mustard (powdered) 0.5g Paprika 0.5g Summer Savory 0.25g Allspice 0.25g Nutmeg *** Sorry no cinnamon again for me *** However, I may add some to any leftover mix I have. First time trying dried mustard in over 10 years in one of these. I couldn't remember if it actually did much. Cooking now will get some feed back soon. So far so good I have a pretty good smell coming out of the fryer.
Couple important things came out of this one:
Tonight's cook was wings and these were the juiciest wings I have had in awhile. Absolutely no marination. I used the egg wash and put about 1/2 teaspoon of sugar in it as well.
Biggest changes for me:
-First time no Coriander but Celery seed in it's place and higher. -First time mustard in a long while -Highest amount of Ginger I have used
This is by far my best attempt. I had about the same amount of the "note" smell from my recent KFC adventure. The familiar peppery and herb smell. Now to be fair, there was 1 Herb that stood out a bit in the real KFC and I had used that to try to determine what herb it may be. That smell needed to come forward a bit. Else the base was there.
The taste I questioned before had to be the coriander I used. Last cook it was that or the ginger. It's not the ginger. If and I mean if I go back to coriander. It's going to be in the 0.25-.3g range.
Taste wise. Better than the real KFC I had last week. No question. But, as always the ever so true next day cold and reheated test needs to be performed. Family only left me 3 wings and I had to fight for them in the name of testing.
Top of head thoughts:
-Don't move away from this. Small adjustments Deep Taste-Ginger isn't to high at least for me -I wonder if I should double down on dry mustard. I think it brought something but what would happen with double -I need to drive that one herb a bit more or switch. I may try Oregano vs Savory even though my smell landed on savory. Or a bit more savory. Again cautious of too many things changing. -I would consider either switching the ratio on the pepper or setting them equal. But I don't think it's a deal breaker. -Still considering the one time I had real KFC an I swear I could taste clove. But for now I'll leave Allspice and Nutmeg. They work.
I have exactly half the seasoning left so I can try doubling up the mustard easy and check that test off.
I am going to label this recipe FLG v1.0 and it's now my new base.

Was the Celery Seed an improvement over Coriander? Absolutely or bury coriander down the chain in weight.

Cold review: Against Deep Taste advice I held on to those 3 wings. Glad I did, best left overs of any cook for me. Had about the same amount of "note" smell as the left over KFC I had last week. Maybe a touch less but damn close. Also, I always had this odd taste with my leftovers. Not bad just odd. That was gone. So for the next few cooks. It's small tweaks or individual ingredient subs only. And 1 or 2 at a time. I will have to really put thought into moving on in a methodical way

Happy for you result, yes it becomes more and more harder to freely move with the spices when you enter the Golden Zone!
The advantage of using Mccormic Poultry Seasoning is that it is made to be balanced with the different herbs, so it will spare you the time of grinding those everytime, and Mccormick is the company that is mixing KFC seasoning!
But there is always space for improvement, cooking method, time, type of Flour, Ratios, Oils, Salt..
Just keep cooking!

Maybe a touch less but damn close. Also, I always had this odd taste with my leftovers. Not bad just odd. That was gone. So for the next few cooks. It's small tweaks or individual ingredient subs only. And 1 or 2 at a time. I will have to really put thought into moving on in a methodical way Excellent report! I'm relatively convinced that the odd taste hails from Clove.

I will have to really put thought into moving on in a methodical way I’m a little lost on ingredients left in this batch out vs your typical cook. Would they be: no clove no sage no coriander? Did you happen to get fresh white pepper or change any milk product, old oil, or flour? Those might also result in off flavors.

Differences
No clove No coriander No cayenne
Add celery salt Add dry mustard Increase ginger
It could be the pepper with a higher ginger helped. I haven’t ruled that out yet.

The 'Mace' I ordered arrived yesterday evening. I made some last minute radical changes to my #15 recipe just this morning, and finally, it's been mixed and is now melding to be cooked as my 15th 'solo recipe design' attempt (16th if the 'Celery Seed Only' recipe gets included):
