Addendum, I thought the Bakers Salt level of 28.5 grams was a tad low vs. real KFC. But my Wife would like it to be a tad lower. Perhaps ratchet up the Celery Seed while ratcheting down the Tarragon. And by the same amount.

Be careful with Celery though, it can easily dominate the flavour, you can try Celery Salt too.

I forgot to add that this recipe pushed Sage to my lowest level ever for it, and it was an improvement in my opinion. My wife said she didn't miss the Sage either.

Yay way to GO! Definitely can make BETTER Than KFC like Chicken Especially New Age Recipe one like TODAY. Anything That TICKLES YOU FANCY with used S&H in seasoning. DO you fry deep or with PRESSURE?? I open deep fry. I dropped at 335 F. and then lowered the temp to 275 F. Pieces were cooked as follows: Wings: 13 minutes Breasts and Legs: 15 minutes Thighs: 17 minutes

The second day eating report:
Delicious! What more can actually be said. With the first bite I immediately thought: 'the note'.
As an aside, while I was deep frying yesterday, my wife was air frying. Today we ate some day old deep fried and day old air fried chicken side by side, and the air fryer chicken wins for flavor and the note, while the deep fryer chicken wins hands down for looks. After eating the air fried chicken, I could easily notice that the deep fryer oil is muting the flavor, and lending a cooking oil oiliness that stands out (albeit that when eaten alone does not stand out). The result of this test truly pleased my Wife, as she vastly prefers the ease of upside prep, plus the downside ease of cleaning the air fryer. And we are not chowing down on unhealthy high-temperature degraded cooking oil via the air fryer. As to the chicken itself, the air fried and deep fried were tied for juiciness and tenderness.
Edit: The lingering Cayenne Pepper aftertaste that we noticed yesterday was not present today.
Edit #2: The downsides for the air fryer are that it cooks only half the amount of chicken at a time vs. our deep fryer, and it also requires more cooking time in the air fryer.

Thanks DT About 12-13 minutes on a side for the air fryer, whereby to achieve cooked through. All of the flavors were more balanced today. The Tarragon did not stand out as much today as it did yesterday. I really think the Celery Seed is the big winner. And that somewhat more of it is required. The only reason to cut back on the Tarragon is to scaled comply with a bag weight. If not worrying in that regard there is no need to scale back.

I am interested in air fried chicken, could you tell us about your experience with it, how does the coating look like, does the breading taste raw? Soggy? Undercooked? Do you think it worths considering?
