Finally, cooked chicken eating report #14, for Final Recipe #14. First the "as cooked recipe #14" (which is my first to contain zero Coriander):
And now the eating report:
1) This recipe vaults to the top per both my Wife and I. Our new best recipe!
2) If we were only eating thighs this recipe would be a world beater, but oddly enough, other of the mixed pieces were not delivering up quite the deliciousness level of the thigh pieces alone. Very strange... (yet I've also noticed this before with other recipes)
3) Did it have exactly the 'note' or flavor of KFC_OR? No! But it had a note and deliciousness all it's own.
4) At this level the Tarragon is undeniably noticeable. Yet it adds a nice flavor.
5) Neither my Wife nor myself missed the Coriander at all.
6) I'm not certain that the B&W pepper levels were at the optimum level, but the Cayenne kicks in on a delayed basis and warms the pallet, albeit in a not so KFC_like way that lingers long after eating. Pepper verdict: A bit more White Pepper, plus (perhaps) a bit more Black, and reduce to (perhaps) outright eliminate the Cayenne.
7) The H&S stand out to a greater degree overall as to taste in this recipe than for KFC. Perhaps ratchet the Tarragon down to about 0.35 grams. But my Wife is a big fan of Tarragon, and it is OK at
8) The small amount of Cumin Seed is a flavor winner. But I would not take it higher.
9) I believe the Mild Paprika belongs, and experimenting with more Paprika is needed.
10) Celery Seed as a replacement for Coriander works, and Celery Seed delivers more and better flavor.
11) I think a tad more Allspice is perhaps in order. Either that or about 0.10 grams of Clove needs to be added. Or perhaps both.
12) I think eliminating the Tarragon, and replacing it with Coriander Seed might be a serious mistake.
To make only small changes, my initial recommendation to myself is to reduce the Cayenne by 0.10 grams, and add a bit more White Pepper in it's place. Perhaps 1/2 gram more White Pepper.
I'm not sure where this leaves Coriander. It is well more subdued in flavor vs.Celery Seed for sure.
I can't wait to eat it 'next day, both cold and heated. I'm anticipating the next day flavor boost that other of my recipes have delivered.
