My sinuses are rather stuffed up and painful right now, and I don't know the degree to which that is impacting things, but without any Tarragon and/or Red Pepper source (such as Paprika, Crushed Pizza Pepper Flakes, Cayenne), and/or Cumin, and/or Oregano source (be it Mediterranean, Marjoram, or Mexican) #15 as a dry mix isn't giving me any KFC-like aroma feedback at all. Panic mode on. It's as if it's crying out for something like Chili Powder...

One reason to drop the red pepper and cayenne is to get the peppers up ….
Oregano is nice, too.
Generic Sudafed (the one you need to show your license for) is incredibly cheap and works quite well….

I just dipped in a finger and gave it a taste, and it's dull, dull, dull...
Perhaps I should just tough it out and cook it as is to learn a lesson from it.

Just a suggestion. In my opinion if you are backing off the white pepper (and black) due to heat, and now have no cayenne, you can bump it right back up.
Good luck.

I really should cook it as is, but adding another 2 grams of Black Pepper seems to be a viable option. I'll await feedback from a few more forum members first though. All of the 2 grams of black pepper I added are of the coarse variety, and it has given the mix a nice amount of black specs. If I do add the additional 2 grams, I may add a fine grind of black pepper instead of additional coarse grind.

Sudafed is a Nasal decongestant and relieves sinus pressure. It isn’t an antihistamine as far as I know. I think Benadryl and Claritin / Loratadine are antihistamines. Benadryl make some sleepy. They all have certain things, like MOAI warnings, or whatever. This time of year when the pollen pops generic Sudafed is really helpful for me. It’s like $6 for 48 4 hour tablets.
