i finally nailed the KFC note!!!
Hurrah!
nailed that mysterious “cooked over campfire” aroma of KFC/KFC firelog.
pairing it with my previous lingering sweet aroma.
here’s the catch: the 10 ingredient does stand on everyone’s shelf. but the 11th ingredient…. boy I’ll say “you got to be an early american settler” to know this spice! It was brought by early settlers

i’m pissed at the guy who said that there’s no cineol in the chinese analysis.
but if one delve deeper into chemistry, it’s easy to learn that sage itself are chock full of cineol.

as much as my 8 minute pressure fried chicken looked exactly as KFC, having perfected that soft emulsified coating. I had enough of Savory and Marjoram. Marjoram is too floral for my palate! Very Flowery and perfumed that it taste like cologne. Savory is barely perceived and again they did not emit that lingering sweet aroma I nailed in my previous seasonings. I used winter savory. More revampings to be done. My chicken is so moist that it destroys the emulsified coatings after an hour or two in the warm oven. as you can see, my spice mix looked exactly as KFCs (unwrapped) greyish and measured 740 grams excluding salt.

no more cinnamon. i tried saigon cinnamon and my chicken turns bitter.

i nailed the sweet aroma of KFC original recipe.
what’s missing is that bitter woody campfire peppery flavor. I think I knew what it is. Like the Colonel said: “Element”. It’s neither a spice nor an herb. He termed it simply as “the 11th ingredient” and not the 11th spice or herb.
i was so afraid before when i tried it. Tried 1/2 tsp of it and all the 10 ingredients was “boosted” or what you can call “elevated”. I mean the pepper suddenly become more peppery. no it’s not msg.

there’s no denying it. Up here in Canada, KFC Original Recipe always taste piney peppery.
Rosemary definitely is in there.
I tried so many herbs. Believe me, the only piney herb that stomps over all when it comes to poultry is none other than good old Rosemary.

words of wisdom:
i’ve done hundreds of KFC experiments to know this. You have to “roast” some of the spices to bring out what Glen said “that depth of flavour”.
even Coriander Seed in 1/4 cup quantities per 2 cups of flour is imperceptible. You can’t taste it even in that large amounts. And also when you smell your KFC blend, you will be hit by that funky white pepper.
Remember. The Colonel’s secret blend is termed “Heavenly Smell”.
unroasted spices with their essential oils “not tempered” mixed with the musk of white pepper creates a funky smelling spice blend.

do you guys finally realizes what the colonel’s pining for? He’s specifically using ingredients that have “citrusy/piney” taste to it. Coriander, Sage, Tellicherry, white pepper. They all have citrusy piney undertones to them. and by using herbs & spices that has the same characteristics then contrasting it with a totally different flavor element is the Original Recipe

the color and smell of my seasoning is pretty much consistent now. look at the black specks in the seasoning. It didn’t stuck out.
