now I have a perfect candidate for Vial E and it’s rarely used today but it was present in the 1940s and was used in poultry. KFC Canada obviously depicting cloves in it’s whole form in their wallpapers is a clear sign that it’s not a part of the recipe. No southern hillbilly will tell you to add cloves in a fried chicken recipe. Cloves is strictly a pickling spice or a marinade spice meant to remove rotten meat smell but not to add flavor. And yes it has the hints of what those 1974 esquire chefs tasted. I nailed Vial E and H visually.

you’ll achieve KFC looks if you wipe your chicken pieces dry with paper towels before dredging. This chicken does not have mustard in it that’s why it’s very thinly coated. if you use high protein flour with soy, mustard, and fry in soybean shortening. you will definitely create that emulsified soft crust signature of KFC. ALSO, this chicken uses a lot of salt as depicted in unwrapped KFC video. 1/2 cup of salt per 2 cups of flour

I finally nailed that consistent “greyish coloured” KFC mix. it was modeled after one of Glen’s test recipe and the measurements specified on how to use it surprisingly matched those suggested by marion kay’s 99x! due to the tremendous amounts of pepper in my mix, the potent aromatics that I’ve used suddenly didn’t stuck out like before but rather harmonized with the pepper’s pungency (as if they all become one! as if it’s just all pepper!!!)

there’s been a major change in my recipe.
celery and mustard is separated (not included in the 11) or just “Spice”… who cares??? but they’re still included in the flour bag in the name of “may contain mustard and celery)
yes it still stands on everyone’s shelves but I learned that during the Colonel’s day “1964”. These spices was extremely expensive.

the indian variant of coriander is “significantly” more aromatic. it’s like the tellicherry of coriander.

my latest seasoning is so common and heavenly that it fills our house with a sweet perfume for hours. I nailed the sweet KFC aroma that lingers but still something peppery is still missing

no more potato starch. i regret deviating to my original recipe earlier. My chicken does have mustard in it but I added potato starch in my flour. further weakening the structure of the coating. Now I will not change my recipe. 2 tbsp of it is enough to not be declared. but still this is finger lickin good! the aroma lingered in the air for hours
