I apologize for creating a thread here in the forum, I felt it’s impolite to just jump inside somebody’s forum.
Btw here is one of my experiment by far.
Ingredients: 1 tbsp ground black pepper 2 tsp white pepper 2 tsp fine garlic powder 2 tsp ground savory 1 tsp ground rosemary 1 tsp oregano 1 tsp cayenne 1 tsp cloves 1 tsp mace 1/2 tsp anise seed 1/2 tsp tarragon 1/2 tsp ginger
1/2 cup AP flour 1/2 cup potato starch pinch citric acid 1 1/2 tsp baking powder 1/2 tsp xanthan gum 1 1/2 tbsp fine salt
1/4 inch canola oil in a skillet, finishing in the oven covered.
I marinaded the chicken in buttermilk infused with salt, thyme, cayenne, and black pepper for 4 hours.
I also used milk & egg dip. I first rinsed the brined chicken in warm tap water and wipe them dry with towel.
I used a big mug for dredging and shaking of the chicken. I only coat once. Result: No Note. Taste of the flour is prominent. But the KFC colour, texture, and “moist inside, crispy outside” was achieved!
I guess garlic and the peppers need to be in tbsps.

I recommend Ancho now.
The 1st time I sniffed it. It smells exactly like cayenne but without it’s tremendous heat.

Welcome to the forum!
Some completely random thoughts in no particular order:
Xanthan is actually a flavor reducer in my opinion. Way too much Savory. Cut it by about a 3-factor. Cut the baking powder down to 1/2 TSP Cut the Oregano in half. Or replace it with Marjoram at your quantity. I like the Ancho idea. Add some Allspice. Perhaps 1/2 TSP to 2/3 TSP. This may spark the note. Adds flavors/oils of cinnamon, clove, and mace/nutmeg. I like Tarragon, but eventually abandoned it. No harm, no foul if you leave it in and enjoy the taste as I do. Cut the clove in half. Allspice has a lot of clove essence (or Eugenol oil). For 1 cup of flour overall I would either use straight cake flour or 3/4 cups AP and 1/4 cup Potato Starch Garlic is the last listed ingredient on all KFC "bags". It must not be prominent in my experience. My best recipes to date haven't had any garlic. Replace Rosemary with thyme. Add 2 TSP to 1 TBSP of MSG. I'm not sure the note will ever materialize without MSG. I would probably cut the B&W Peppers nearly in half. But some current thinking has them at your level. Early on (at least) don't worry too much about having more than 11 H&S I would probably either cut the Mace in half or more likely just leave it out. Allspice has its essence/flavor/oils covered. I like the Anise Seed. Switch to weight measure.

I think the 40 ounce KFC bag (the one used when all ingredients were "real") was likely something along these lines:
14 ounces MSG 11 ounces combined B&W Peppers 9 ounces Salt 6 ounces H&S (other than B&W Peppers)
Ounces here are weight ounces, not volume ounces. Scale your recipe weights to closely match these as to ratio.
As to scaling: For 400 grams of flour (roughly 3 level unsifted [as in scooped] US Cups) simply change ounces as seen for the 40 ounce bag into grams.

I forgot to add that additional salt is added that is not in the proverbial "bag". For 400 grams of flour an additional 48 grams of salt is added above and beyond that which is in the "bag". For a total of 57 grams.
