For the herb and spice mix: 1/2 teaspoon ground cayenne pepper 1 teaspoon freshly ground cumin 1/2 teaspoon ground mace 1 teaspoon freshly grated nutmeg 1 teaspoon paprika 1 teaspoon freshly milled black pepper 1 teaspoon ground ginger 2 teaspoons crumbled dried basil 2 teaspoons bay leaves ground to a powder (use a spice mill or blender) 2 teaspoons crumbled dried oregano 2 teaspoons crumbled dried sage 2 teaspoons crumbled dried thyme 1 teaspoon salt If you replace cayenne , cumin and paprika with chili . Replace bay leaf or any herb with cloves . Boom that is a 10 herbs and spice another version of southern fried chicken that CHS keeps comparing to it .

A - Nutmeg "actually can match" B - Savory Or Herb Or Celery C - Cloves D - Sage Or Herb E - Allspice Or Herb F - Ginger Or 11th G - White pepper Or 11th H - Mace I - Thyme Or herb or celery J - Chili K - Tellicherry Black pepper

The other thing is, through my last visit to KFC, I thought I detected Celery too, but I am sure it was not listed as one of the allergens! How can we explain this, and if celery was not what I tasted, then what could be that?! Celery is unique in its own way, and nothing I know of can substitute this spice to satisfaction, except maybe the complbination of coriander, parsely and ginger together. Hi DT. Try lovage

Lovage is actually the source of many "celery seed" additions to some spice blends.

I've researched Mccormick and Marion Kay to see if they sell Lovage, but couldn't find it by either of them.
I want to try this herb dried if I could be able to find it, it is one of the herbs De Provence, and I have an old KFC copycat recipe from 1970s calls for the use of this blend (De Provence).

After my last test sets, I eliminated Basil from my personal Herbs and spices.
To my mind, it became clear that this herb doesn't belong to the original profile.
That was a useful exercise, Italian dressing seasoning and Ledington recipes are not the answer, but of course thy may contain some of the original recipes ingredients, like any other seasoning blend.

At this stage, I am fine tuning my recipe, in additions trying new ideas, or something I haven't explored enough in the past,
I still miss one thing I couldn't replicate in any combination I've ever tried, I know it, but can't describe it in herbs, spices or words...
No recipe was close, the best ever recipe I had, I don't give it more than 25% of the original.
It is the one thing, and the everything.

DT 53My best recipe to date! Smell was perfect, Taste perfect, I am bloody close to bring the real thing as I remember it of course, and by this recipe I made great revolution against the old school concepts, was I happy with it ?! sure! I am still missing something but, yah, it was finger lickin good! Its clear to me now, that much work must be followed, there are simply toooo many herbs and spices profiles that I need to explore further. Happy frying KFC Replicator! Deep Taste
