Haven't read you lately from Ken's forum. I still have your last recipe. How has your duel with Ken gone?

Nothing, he challenged his recipe against mine, and lost terriblly, he couldn't handle the result and chose to stay alone there.
Let's forget about those, we have more important things to do .. a recipe to crack, don't we..
Since 2005 and I am looking for the secret, it is a lovely journey between herbs and spices, some want us to taste numbers, some want us to taste vanilla, this is all fine, as long as we don't conquer others thoughts and mouths.

Agreed. It ain't about numbers, it's about taste. I snuck on his site once (i'm banned) and posted his wife's recipe here. Not much response though.

Chicken looks good. Not sure about your nutmeg claims. I read one article from CHS where he told a lady to throw nutmeg and black pepper into her gravy to improve the overall taste. Not sure if it was in the chicken, but he did like it in the gravy. Nutmeg always seemed to detract from the overall taste to me. But then again, that is why we should all cook and not rely upon another's tastebuds. I always thought that nutmeg was a shortcut to get to that exotic flavor we were looking for without finding the correct spice/herb balance. Your breading flakes up as I remember as a child.

Every week I try to fry a recipe using a new combination of spices, it is a tasty hobby! now Nutmeg, it was very clear to me as I tasted it at KFC, and that was a nice surprise too, I thought as I tasted it, as if they have forgotten a whole piece of Nutmeg in that breading! Deep taste . You have a reasonable point . The weird thing for me is , Are not the seasoning bag prepackaged? If the workers premix the seasoning themselves that mistake would be reasonable , How this mistake could happen . What do you think? The other thing , your breading is perfect . a 10 out of 10 i wish i can make breading like yours , really like my childhood kfc memories .

Thank you very much!
Let me put it this way, if there are 11 herbs and spices, you will be able to taste them, not all of them maybe, and not by only one attempt, the last year I was focusing on Mace instead of Nutmeg, that has helped me very much, and I was somehow lucky to catch the Nutmeg presence at KFC the last time. It was Nutmeg, not any other spice for me.
This doesn't mean you have to accept my experience as a given, it will always be a subjective thing. but I wanted to share it with you.
