I agree the dextrose and corn syrups are used to stick the spices to the flour and the chicken.
BUT and I will say BUT it works much better with the Pre-Dusting method then a water dip and flour dredge.
the dextrose or corn syrup in a quick dip and immediate toss into flour does not give the dextrose or cornstarch the time to get tacky.
the Old Milk n Egg Warsh was tacky and allowed a sticky glueish effect the powdered items need a soak time with some flour on the chicken

Could it be that if these tail end spices at these weights are adequately blended into a 25 ounce jug of 99-X it will get closer to being the equivalent of 26 ounces of KFC spice mix?
8.69g. Garlic Powder 4.84g. Marjoram 2.41g. Summer Savory 2.41g. Thyme
Sum = 28.35 grams = 1 ounce

I will agree it brings it home
One of the Key things that everyone contends with against KFC and will always have to deal with is the 1966 Lawsuit against Famous Recipe, followed by Marion Kay, and Grace Spices.
They were ALL limited to amount of spices after the Lawsuits or had to agree to the same or similar Court Case.

I don't intend to buy 25 ounces of 99-X, as I'm retired and on a fixed income.

Here is why you add only 13 grams of the spice mix to 200 grams of flour:
1) KFC adds 26 ounces of spice mix to 25 pounds of flour
2) There are 28.35 grams in 1 ounce
3) 26 ounces x 28.35 grams/ounce = 737.10 grams
4) 737.10 grams ÷ 25 pounds flour = 29.484 grams of spice mix per pound of flour
5) There are 453.6 grams in 1 pound
6) 29.484 grams/453.6 grams x 200 grams = 13 grams of spice mix (exactly)

I agree with 13g spice into 200g flour. And I check this number within reason to the recipes I have considered.
The question I ask myself is. There is theory that KFC has been using extracts for a while now to add flavor and perhaps hide ingredients in the bags from eyes and analysis. If this is the case. Without extracts or knowing what they are, as a home cook do I just need to move past the concept of only 13g to perhaps 15 or 16g. Zing my own recipes.
Also, when and why did the zinging start?

What I can't understand regarding the lawsuits is that KFC never patented the original recipe. How can they defend in court what is not patented, and is merely a secret? What legal ramifications will befall the individual who eventually falls upon a flavor dead ringer of the secret recipe?

This is the latest evolution of the recipe I've been incrementally progressing toward. It represents only small changes since my last actual chicken deep frying session. Only small changes are likely required from here forward because my last attempt got close.
