I should state that the above mix sums to 120 grams, so at 40 grams, 1/3 of each item as seen above is being added to every 200 grams of flour.

Personally I would increase the Savory amount and Red Pepper amount
cut down the Coriander.
I would exchange the Thyme for Rosemary.
The Red Pepper Should be a Blend Red Peppers and Cayenne NOT a Hot Cayenne
I would also add a Onion Powder & Garlic have a aroma The Allspice also has a aroma You need to add a sugar, I use either a Corn Sugar, Brown Sugar, Or a Corn Syrup in your Egg/Milk Warsh
if your NOT using Fresh Egg & Milk then skip the Sugar and use the Dream Whip Package Powder which contains Egg, Milk, and Sugar
Now I know everyone says there was NO sugar in KFC. YES there was (review the 1974 Esquire) Document reference to Sweeet.
The Salt you use needs to be a blend of Fine salt and Diamond Cut style salt or Coarse which can absorb flour seasoning and Spices
Often many of the season salts Used a Great Blend of salts they KNOW the Important of the types of salts which retain flavor and coatings (Lawery's ETC)
The Maggie Seasoning uses MSG, IG&IS and other Flavoring which can help cut back salt amount
If your using the Season Salt and the Maggie's Start With smaller amounts you cannot take it out if you put to much in

My Savory is the Winter variety. It is said that for the winter variety you should use a bit less because it is more bitter.
Would Lactose powder suffice as a sugar? How many grams, and do I short the flour by the same amount?

Allspice increase to 2g Onion Powder add 1 g
Garlic and Onion Powder give aroma so does the Allspice Cinnamon gives better Flavor then clove you can experiment or mix clove and Cinnamon
Dill & Parsley in small amounts also hit aroma
Remember that Onion, Garlic, Dill, and Parsley were used Fresh in the 1930
I know you are attempting to stay in a 11 Herbs n Spice amount CHS said "11 herbs & spices" "On all kitchen shelves
Colonel S says his secret 11 Herbs and Spices BUT never said that's is ALL that is in the recipe He said , and you could take combinations of some of those items an get another good seasoning.
Onion and Garlic 1 seasoning Sweet Red Pepper & Cayenne 1 good seasoning Rosemary & Thyme 1 good seasoning Salt and Pepper 1 Good season
Yes CHS Corporation said 11 Herbs and Spices and Individual spices There were spices sold under 1 Package Like season-all Combination of salt and pepper vegetable Flakes had 5 ingredients mixed in 1 Ingredient
So keep the mind open and remember you could take combinations of some of those items an get another good seasoning Keep Mind simple to Combination is usually 2 items mix together Onion and Garlic, Rosemary & Thyme, Savory & Sage, Basil & Thyme, Cinnamon and Ginger. Milk n Egg Warsh

If I was to add powdered dextrose (corn sugar) to the above (recipe attempt #3), how much dextrose should be added?

the Dextrose I use a try and stay under 5% of Total mix weight of spices BUT use your own judgment for sweetness. The Dextrose was never intended as a Sweetener it was used to help get the spices to stick to flour and chicken. so Mix the spices with the Dextrose Prior to adding to Flour.
Some people think its to sweet at that 5% but use your own taste also as a factor. I hear many people say well its to salty or to sweet ETC.
