Salt must be one of the ingredients included within the 100 grams, as otherwise the last sentence in the Winston Shelton quote above would have read more like "Then he said I should take that and mix it with a certain amount of soft winter wheat flour and salt and that would be it.
The "and so on" permits the inclusion of ingredients beyond herbs and spices. Likely both Salt and MSG are part of the 100 grams, as only "a certain amount of soft winter wheat flour" (I.E., cake flour) is required beyond the 100 grams.

where is the 20 Grams Herbs and 13 Gram Spice that Winston S mentions in the Story in you Recipe He Did NOT mention 20 Grams salt or 13 Grams of M.S.G.
Another authority Tommy S who Did a Cook-Off against KFC NEW on Good Morning America indicated 11 Herbs and Spices and NEVER spoke about Salt. As Salt was not a measurement
Look at Todd Wilbur has the Salt as a external measurement
For the Majority of KFC Time they ALWAYS had Salt in a external Bag
TEF C.H.S. never said the Bag was 11 Herbs and Spices and Salt NO it was external salt
C.H.S. ALWAYS said that Flour, Salt, Pepper, was what he cooked chicken originally then he added the 11 Herbs and Spices

The word "basically" does not infer "definitively". That Winston begins with "He basically" infers a clear allowance for wiggle room and obfuscation as opposed to any level of firm assuredness.
