I have Typed: Celery, Onion, Garlic are NOT part of the 11 Herbs and Spices They ARE ALL extra items ALL 3 Salt, M.S.G NOT listed as 11 Herbs and Spices They are Extra item's extra weight above 100 Grams is added for the Following items That are NOT part of the 11 Herbs and Spices in the Recipe which was written by C.H.S. I explained the Type of Pepper, and stated Pepper is also used in multiple ways.
IE: If real Milk and Egg is used you may want to try adding Salt & Pepper for extra Flavor. C.H.S. original words said he added salt and pepper to the Egg Warsh.

I dry brine my chicken with the regulars, including black pepper. I don't rinse the chicken, but rather put it straight into the milk and egg wash. Six of one, half a dozen of another.

The magic scaling factor divisor = 7.7, wherein:
100 grams ÷ 7.7 = 13 grams
