The Ancho Pepper, has a decidedly smoky sweet taste. T The Anaheim Pepper has a sweeter pepper flavor.(aged to red) Either way both are a GREAT flavor. I have expressed to you in Private we are testing the Anaheim Peppers / Many old sources Spice companies are relaying that the OLD 1950/1960 Red Pepper were Local sourced and used the Anaheim Pepper if you wanted more heat they sold the Red Pepper & Cayenne Blend BUT the Red Pepper was Anaheim Pepper

I noticed the smoky taste of the Ancho, but I seem to get the same smokiness for Tones Chili Powder, so I'm figuring it also uses Ancho (along with onion powder, garlic powder, oregano, cumin, and salt). But I've never exceeded 0.5 grams with the Tones blend, and I just added 3 grams of the pure Ancho. Ancho sort of tastes like Smoked Paprika. The South African KFC OR ingredients list includes "barbecue flavor". I wonder if it isn't just Ancho smokiness?
Edit: My greatest fear is that the smokiness will overpower the other flavors. I probably should have gone with 1 gram, but there is no turning back now as I've already added it to the 200 grams of Pastry Flour.
Edit #2: Now that it's in the flour it looks like a spit'n image of the mildly reddish leaning real KFC OR bag content for which you've posted a picture a few times. Sans that my coarse black pepper isn't overall coarse enough to give me the large black specks look of the real mix.

We are HAVING GREAT flavor from the Anaheim and NOT over powered Flavor We are going to cut back the amount we tried as it can get a Dark Color to the Chicken Like a Heavy paprika infused Spice and Herb.

Ok, here's the "The End?" recipe's eating report.
First the good: 1) Looked (and looks) perfect. Done to perfection. 2) The oil was hardly darkened at all by the 3 grams of Ancho Pepper. 3) Sorry, but that's it for the 'good' category.
Now for the bad: 1) No real note of KFC OR. My wife said this is perhaps the worst recipe I ever cooked. Nothing seems right about it. 2) Ginger Overload. Needs cut back to 1 gram where I'm happy with it. 3) Not enough Salt, and too much Garlic. That plus it needs more MSG. 4) Not enough Pepper. Needs about 0.25g. of Cayenne by my reckoning. 5) It's literally crying for Sage. About 0.75 grams needed. (This is the first recipe for which I intentionally left Sage out.) 6) Thyme and Oregano both have to go. Adding them in after a good number of batches without them really trashed the taste. 7) Savory can stay, but needs to be reduced by half. 8) Ancho is a major bust. I'll likely never consider it again. No benefit at all. Odd taste. Waste of time. 9) This recipe couldn't stand up to my old favorite Recipe #4, let alone my best and most note expressing recipe #17. 7) The Allspice, Mace, and Clove combo is a major bust. Back to using Clove, Nutmeg, Mace, and Cinnamon for sure, as for #17.
Well, that about wraps things up. Needless to say, I'm shocked by just how bad this recipe is.

This one was a quick mix and immediately cook it effort today, and the eating has already happened. Here is the recipe. The post to follow will be the eating report. Some friends of my wife at Church wanted to get some of my seasoned flour and give it a test, so I doubled this recipe, coated 4 thighs and 4 legs in half of it, and packaged up the other half of the seasoned flour for my wife's friends.

Eating report for November 8, 2022 dated recipe titled "This is the one!". 1) This isn't the one! Recipe #17 with Cayenne Pepper added was/is much better in my opinion. 2) Allspice has to go. I can't make it work. Either that or the Mace needs to be cut down. The two together expressed some sort of overload. 3) A bit too much Ginger. 1 Oz. even would have been better. 4) The Pepper was way under-expressed, and there was zero lingering Pepper bite. Plus it seriously lacked in White Pepper. 5) I'm pretty sure now that White and Black Pepper must both be 3.00 grams. And that Cayenne must be on the order of about 0.50 grams. 6) I don't think the Anise Seed was helping anything. It needs to go away (for awhile, if not for good). 7) I don't think that either Thyme or Marjoram need to be in there at all. Both need to go. That opens a door to Tarragon. 8) Salt fell way short of where I believe KFC would be. 32 grams of Salt are going in next time. 9) Mace alone may be too much of a good thing. It is missing the boat somehow. Something close to 50/50 Mace and Nutmeg seems to work better. 10) There seems to be room for a wee pinch of Cinnamon after-all. Edit: 11) I think Cake Flour tastes better than Pastry Flour somehow.

200 g. Cake Flour 32.0g. Salt 3.00g. White Pepper (1) 3.00g. Black Pepper (Half fine, Half Coarse) (1) 1.25g. Coriander Seed (2) 1.00g. Ginger (3) 0.75g. Sage (4) 0.50g. Cayenne Pepper (5) 0.25g. Summer Savory (6) 0.25g. Garlic Powder (7) 0.20g. Clove (8) 0.20g. Mace (9) 0.20g. Nutmeg (10) 0.10g. Cinnamon (11)

I'm thinking that Tarragon may be a better bet than Garlic Powder. Tarragon has a hint of licorice. Garlic just overwhelms. Garlic is great on beef, but not chicken...
