MSG (as I have noted before) is a sweetener. And this government sponsored medical industry study confirms it. If in the recipe above you desire to cut back on my 15g. of MSG, then bump Dextrose up to 3g. pubmed.ncbi.nlm.nih.gov/14578125/

The one thing that you don't hardly taste when you place MSG on your tongue is Salt. It instead tastes mainly (albeit a bit oddly) sweet. IMHO, it is delusional to consider MSG as a salt substitute. Things such as this are always a bit vague, but if I was to briefly summarize the main flavor 'note' defect which I perceived within "This Is The One!" it would be a cloying "Mace, Allspice, and Clove" overload.
Salt and Pepper and Sweetness related flavor perception defects all take a back seat to the above.

After straying and finding yet again the exact same result, I'm now trending back into the "less is more" camp.

I just ate a leftover leg, but before I did I sprinkled a good pinch of Cayenne Pepper on it, and then Sprinkled Salt on it. It was s Still a bit overboard in the Allspice, Mace, and Clove camp, but it was also far more delicious.
I can now almost 100% certainly confirm that the very KFC like lingering aftertaste of Pepper comes directly from cranking up the Cayenne Pepper, and not from boosting B&W Pepper. It is Cayenne that needs to be boosted. A lot!
I'm now thinking that Dustin got it close to right as to the Peppers. I'm presently thinking in the neighborhood of 3 grams White Pepper, 2 grams Black Pepper (all medium coarse), and 0.625 grams for Cayenne.
And as to Salt, my thought is now that 32 grams, to perhaps even 34 grams, is sounding about right.

My Wife and I just ate the last 4 pieces of re-heated "This Is The One!". I experimented with liberally sprinkling Sweet Basil, Sage, and Tarragon onto it. Sweet Basil was a nothing burger, Sage was sort of OK, and much better than the flavorless Sweet Basil, but when I bit into the Tarragon sprinkled Chicken a big smile appeared on my face. The Tarragon was delicious plus! And there was a very subtle hint of Licorice as a flavor positive bonus. It truly transformed the Chicken.
In full disclosure and fairness while I'm bringing closure to this recipe adventure, my wife wanted me to let everyone know that she quite enjoyed "This Is The One!" from day one, and she considered it to be much better than KFC.

Now it comes down to determining just how much dried Tarragon is right (bringing forth flavor without becoming cloying) for 200 grams of Flour?
