The seasoning mix had a Good Aroma after mixed.
This time we Vacuum sealed the Spices and Herbs in a Vacuum container until the spices and Herbs were Pulled together.
Trying out a New Vacuum Chamber Machine and wanted to try a 2 Spice Bags Spice Bag which were vacuum seal to see if the Oils blend more to each other or if there is any difference ?
We Do have 2 Identical Bags NON Vacuum sealed in industrial bag Ziploc style Bags as the comparison.
Previous experiments with the Vacuum sealer was be Dry Brined the Chicken and Vacuum sealed the chicken for 24 Hours. It made some of the Best Inner tasting flavored chicken made. We still use it for certain items BUT not all items. ALL items we Sous Vide are in Vacuum Bags.
Our steak Sandwich steaks are all Sous Vide and Dry Brine Marinade this method speeds up our cooking time for the Steaks which are then patted Dry and seared on Open High Temp Broilers or Flames Char on open BBQ style char broiler
Chicken Sous vide is a Much more difficult item. But does work Great also. we have pre cooked chicken to a 75% temp internal cooled the chicken and seasoned floured it then Quick Hot oil Bath for crisp coating effect. It does produce great chicken also and YOU would never know it was Sous Vide first
I Do Not know if we will cook the New Recipe for appy Christmas eve or NOT

A proposed fresh look at circa 1939. Add 3 grams of MSG to bring it up to the franchise era.

I think this is the hardest part of the journey. I think working the known ingredients from the MK variants back to the vials is doable. But going from the vials (which may not be 100%) back to 1939 will be the hardest. Unless there is no magic and the ingredients are the same with only substitutions for availability and cost.
He claims once he settled in on the original 10 he only added 1 ingredient circa 1955. So there is a possibility that no major ingredient changed between the vials and 1939.

So KFC NEW AGE IS LYNING THAT the 11 Spices and Herbs were made in 1939 ?
Every Where KFC NEW Age is in the World they say 11 Herbs and Spices 1939
I would guess ONLY that in 1955 it would ONLY be NUMBER 12 or M.S.G. NOT a Spice or Herb ?

I had a good product and I knew it. I had been using this in my restaurant for 16 years (1939) – there wasn’t and guesswork in what I was doing – and I Knew how the public liked it.
That didn’t take any time, scarcely a day or two. Then I thought I had the perfect thing – it was just great. But there was one more ingredient that I wanted to put in, but I was afraid to in case I spoiled the trade that I had. Then one day, I had an order for $500 worth of chicken for a boat trip that a coming up the Cumberland Falls. I thought well those people aren’t my regular customers.
I am going to fix the chicken up with this and see what it will do. So, I put it in the flour and stirred it up with the other seasoning I tried the first piece out of the cooker and it was the best I had ever eaten it has remained the same to this day.
Also a NOTE * CHS said He developed the 11 Spices and Herbs and then Started using the Pressure Fryer so the 11 Spices and Herbs Came before the Pressure Fryer Pots in 1939/1940 ?

In the meantime, I had developed my own special seasonings. I was selling an awful lot of chicken and I was building a wide reputation for it. I had started out with a couple of seasonings, including pepper and salt. By trial and error, I finally arrived at what I felt was the perfect blend to supplement the fragrance of my chicken. I got up to about ten different kinds of seasonings. But no matter how much chicken I sold, I still coated it by hand with my seasoned flour. I was afraid to put in another seasoning. I had one in mind I thought would be good with the rest of my seasonings but there was nobody to try it out on except my customers. They’d come in to my place expecting their chicken dinner to be exactly the way it was the last time they’d had it.If I put in a new seasoning, they might not like it as much as the chicken they’d eaten before. I’ve always been determined that a dish that tastes great once will taste exactly the same or even better a year later.
Then one day I got an order for 500 chicken dinners. They were to be eaten on a boat trip up to Lake Cumberland. My assignment was just to fry the chickens for that many dinners and deliver them in big cases. I had an inspiration. I thought, “These chicken eaters are not my regular customers. They don’t even know my chicken. I’ll try my extra new seasoning element out on them.” I threw two handfuls of it into the flour and stirred it up with the rest of my seasonings. When I fried it up, it was the best chicken I’d ever tasted in my life. And, I’ve never changed my ingredients from that time to this.

Agreed! And that means the 11th ingredient added for the boat trip was a seasoning. Is MSG a seasoning? Is it ingredient #11?

As far as MSG goes is it possible it was Brown and Pete that came up with that. To be a flavor booster as they reduced and cut back on quality and amount of real H&S? Just a thought.
If MSG was what was added for the boat trip. Then he counted that as the 11th it would seem
