But if deepfriednew101 is also correct in his assessment that Coriander was an addition made by Bill Summers of Marion Kay, and that CHS used Sausage ingredients, then 1939 may have looked something more like this: 7.00 Oz. Black Pepper (half fine, half coarse) 5.00 Oz. White Pepper 2.75 Oz. Paprika (1) 2.75 Oz. Ginger (2) 2.00 Oz. Fennel Seed (3) 1.50 Oz. Sage (4) 1.25 Oz. Caraway Seed (5) 1.00 Oz. Ground Brown Mustard Seed (6) [a.k.a., Chinese Hot/Dry Mustard Powder] 0.75 Oz. Allspice (7) 0.75 Oz. Mace (8) 0.50 Oz. Savory (9) 0.50 Oz. Marjoram (10) 0.25 Oz. Clove (11) Sum = 26 Oz. Grind everything except the coarse Black Pepper. Then add to 25 Lbs. Flour and 4 Lbs. Salt I think this one is also worthy of actually being cooked. But again I would also add 7.50 Oz. of MSG to it whereby to advance it to 1951.

every known old photo and or manual suggest 3lbs / 6 x 8oz cups 48 oz Salt
In All recipes WE have Every cooked over 3.25Lbs of salt are having people say the salt is too heavy ?
Only our experience and we have experimented with tons of salts and grinds of salts ?

I only question the 4Lbs of salt every known old photo and or manual suggest 3lbs / 6 x 8oz cups 48 oz Salt In All recipes WE have Every cooked over 3.25Lbs of salt are having people say the salt is too heavy ? Only our experience and we have experimented with tons of salts and grinds of salts ? A printed KFC franchise manual from circa 1970 instructs that 3.75 pounds of Salt are to be added to 25 pounds of flour. But I'm fairly certain that in times well earlier than circa 1970 it was 4 pounds.

6 Cups of our container of table salt purchased from Aldi would weigh in at 4.2 pounds. Each measuring TSP of it weighs 6.62 grams on average.

OTOH, 6 Cups of our Flour Salt would come in at about 3.43 pounds by my reckoning.
Edit: Call it about 3-1/2 pounds if using a metric Cup measure.

I'd purely guess that Popcorn Salt might come in at about 3.75 pounds for 6 cups.

3.75 pounds of Salt may represent the Salt level after MSG was introduced. 4 pounds of Salt was likely pre-MSG.

In my review of 100's and 100's of Documents and Manuals ETC ETC ETC
3Lbs appears to be the Amount of just over at around 3.3Lbs of Salt was used in the Oldest reference in Print.
In ONE reference and ONLY by memory there was a Reference to 5 Cups of Flour and 1 Tablespoon plus 1 teaspoon of Popcorn Grind Salt. This was information from one of the Old Diners who had KFC as a Chicken item in there Hamburger Stand. The Original Owner of that Hamburger stand Told me that the Calculation worked out to basically, 4 teaspoon or 1 1/3 to 1 1/4 of Salt He said he just used 1 Tablespoon and 1 teaspoon and CHS was OK with that method of measurements.
I think when we did a inhouse weight of the 1 Tablespoon and 1 teaspoon back then it weighted 80g of Fine Salt BUT I'm only referencing memory
ANYONE can do there own calculation to see where this FITS into making sense or NOT.
in our test back then it was a Good amount to use.
when I asked Him the reference between the MSG and Salt use His Math was
1 Tbsp Salt 1 ½ tsp Accent
Again ONLY personal communication with 1 of the Original Owners who was part of the 5 Franchise owners on the Canadian Charitable KFC. (He Did comment "thats why CHS bought so much MSG as he used it and it was Harder to obtain so CHS ordered it in the Barrels")

I have settled on 2 TBS, or roughly 36.6g of salt per 2 cups of flour. MSG is always 1/2 of the total amount of white and black pepper. I have a difficult time seeing CHS pull out the scales to add salt to a batch.
