Add to 25 Lbs. Flour and 4 Lbs. Salt
Note1: At some unknown juncture MSG was introduced as ingredient #12. Note2: In circa 1951 CHS tossed in 2 handfuls of White Pepper, with all credit here due to smallgree, after cutting Black Pepper back by a similar amount.

I love looking at ALL possible things when it comes to the 1956 Cumberland Story.
Please explain the rational to the 2 Handfuls of WHITE PEPPER.
CHS clearly made representation that it was a ELEMENT. Ac'cent was sold as a Element that would make your meal better.
CHS was already using White Pepper in his Fried Items since 1940 ?
ONLY my opinion, and I will still maintain the possibility that it might be something other then MSG BUT I may be prejudice to MSG.
Please explain the 1956 White Pepper Guess please

Please explain the rational to the 2 Handfuls of WHITE PEPPER. Not really a topic for discussion within this thread. I would much rather that you finely detail your own potential 1939 CHS recipe.

I've maintained for a long time that a person who admittedly cooked the best fried chicken around would not just willy-nilly throw in a strange element for a large order. It only makes sense that he would throw in a "similar" element as he was already using, or an enhancer, such as white/black pepper; salt/confectioner's salt; different oregano; different liquorice flavor; white/brown sugar; msg; etc. It was Ledington that said that white pepper was the secret, and no-one was using it. CHS himself said that the "two handfuls" he threw in made the best chicken he'd ever eaten. He also at one time (I remember seeing it) said that he had 10 or 11 when he added that last element. Then the interview was re-released with CHS saying he had 10 and added the 11th. Looks like two merged into one, or were actually the same spice or herb.

In Canada where CHS lived for 12 years and Did More interviews over and over then ANY country in the world.
Printed in ALL the Canadian Documents which was a Charitable Organization the 11 Spices and Herbs Made Original FROM 1939. It Did not say 11 Spices and Herbs with Salt. CHS openly Said you ADD Flour, Salt, Pepper, Herbs and Spices.
He openly said the Original started with Flour, Salt, Pepper and then Added the 11 Spices & Herbs
You can contact the Canadian KFC Operation and ask them to send you the 1960's Press releases of that Time period

Listening to what deepfriednew101 is saying leads me to speculate as to something more like this for 1939: 7.00 Oz. Black Pepper (half fine, half coarse) 5.00 Oz. White Pepper 2.75 Oz. Paprika (1) 2.75 Oz. Coriander Seed (2) 2.50 Oz. Ginger (3) 1.50 Oz. Sage (4) 1.00 Oz. Anise Seed (5) 0.75 Oz. Ground Brown Mustard Seed (6) [a.k.a., Chinese Hot/Dry Mustard Powder]0.75 Oz. Allspice (7) 0.75 Oz. Mace (8) 0.50 Oz. Savory (9) 0.50 Oz. Marjoram (10) 0.25 Oz. Clove (11) Grind everything except the coarse Black Pepper. Then add to 25 Lbs. Flour and 4 Lbs. Salt I think this one is becoming worthy of actually being cooked. But I would also add 7.50 grams of MSG to it whereby to advance it to 1951.
