Two questions a can you use milk and egg wash instead of the powders? And question b can you lower the amount of salt in the brine? Kosher chickens are already dry brained to remove the blood and that's the only chicken I can get my hands on thanks in advance Yes of course that was the colonel's way in the beginning . "That's one of the reasons old kentucky fried chicken was darker in color "browny" because of the whole egg to 2 cups skimmed milk . and the whole fresh egg is now substituted with only "egg white" powder . The other reason is the change in the recipe it self by reducing amount of some ingredients and een substitute other . of course you can adjust the salt as you like . and there are many factors . You have to experiment that . And of course you mean Brine not dry Brained the chicken . that sound too harmful and sadist .

I made this and it was great, ordered a small deep fry unit to try making it again this weekend because I think I kinda messed up the frying in my dutch oven. highonascii I'm wondering if you have attempted any other copycat fried chicken or fried chicken? I might want to try to copy Popeyes but I have heard thats not hard to do except you really need a pressure frier to get that style of chicken.

Thank you for this highonascii! I'm pretty new to the forum and I have a dumb question. Do you blitz every herb and spices in a small blender to get a fine seasoning?

some people grind all the Herbs and spices and some people use a combination of the fine ground spices and about 20% of a medium grind herb and spices the cracked black pepper should not be grounds

I remade the recipe today. This is 95% KFC, enough that you wouldn't feel like your missing anything. There is a lot of MSG in it though, enough that my brain tingled lmao, but damn good chicken. My family found it a little on the salty side, BUT KFC is on the salty side (which I love) so I think this is spot on the KFC's salt in my opinion. Crazy it took all these years for an actual ACCURATE recipe to come out. highonascii thank you again, I've tried recipes periodically through the years and this is the closest I've come thanks to your help. The bread flour definitely makes this chicken taste alot better as well.

My family is more of the "popeyes" type, so thats why they made that comment I think. I love this recipe though. Really appreciate you hard work, you did a great job
