I tried my first batch of this recipe, I didn't have onion powder (I thought I did) so I put a little onion salt in, I didn't have summer season so just left it out
I will say it came out amazing, except for the first piece I ate out of the fryer, I mean it wasn't bad but it was more like a dodgy fried chicken place, and not the original recipe we look for.
However because I wasn't ready to eat it all anyway I put it in my anova steam oven at about 60c and 75% steam and left it for an hr or so while awaiting friends etc
The next peice I had was soo soooo much better, like it should taste, so I think letting it rest and drain in a steam cooker is a major part of the flavour profile we are looking for.

The amount of water isn't particularly critical, just add more till it covers the chicken completely
