Highonascii, playing with the proportions with my spices brands, step by step it's more accurate, but I feel ginger is not necessary or may be should be changed. Did you try it without ginger? I will try it in my next attempt. I'm going to increase my weight 20kg with this

Ginger was in the original recipe it was discussed in the Tom and Sherry Settler court case when they found the hand written recipe and in court KFC called there note recipe a stuffing recipe and Tommy Settler said there is no Ginger in stuffing recipes. Also it was in the original 99x and was listed on containers of Mariam Kay chicken seasoning which was sent to KFC in 1973 and 1974. So 100 % in the Original Recipe.
The question is was there Cinnamon in the Original Recipe

You are right guys, without it, the flavour is different. I reduced the quantity and now it fits better for me, also I reduced cloves and anise. This weekend I will try with citric acid, I now it comes from a YouTube video but comparing with the original, I taste a acid flavour I don't taste in the recipe. For me the recipe is enough, it tastes great but it's just for fun. It's very very near, all my house smells like a KFC restaurant when fry it. Regards.

Did you know citrus acid was used in the original Lard KFC used If you research the oil Lard, Fat used to cook chicken in the early days and Mc Donald Fries until the 1990's Fat was used KFC originally used lard which had to melt from solid prior to cooking and that took 45 minutes. The old Lard Tins say Citrus Acid on the label to stabilize oil and preserve the Fat for continual use without going rancid

Hi, I haven't that amount of knowledge, but make sense for me it have it, there is a lemon taste in the original i want to investigate. I have read people adding lemon pepper but I don't think it is. Let's see.

There are two theories with the Lemon in the KFC
Original KFC had a Accent MSG with Lemon which got changed to a Lemon Pepper later in years
Accent MSG with Lemon ( No longer made ) Lemon Pepper add to replace the Accent with lemon
There is information which showed these items as a mix for KFC ? only 10 items
Salt Pepper Basil Parsley Chili powder Lemon pepper Thyme Sage Onion powder Garlic powder

Ok mates, try to add citric acid and see the difference. I added 5gr to HighonAscii spices recipe, but probably needs more. I had a problem with the breaded, I don't know if it was caused by it because i changed other things, but the taste is a step forward.
Let me know if you try it.
