Made some popcorn chicken using chicken thighs. Was sooooooooo good. Probably my new favorite way to make chicken because it's actually pretty quick to do.

4 Tblsp MSG for brine???
1 Tblsp for 1 cup of water seems a massive ammount!

4 Tblsp MSG for brine??? 1 Tblsp for 1 cup of water seems a massive ammount! It's the right amount, but you can do the brine without the msg and it's just as good. I've done it both ways as I don't always have msg on hand.

was it 4 pints?

4 Cups Water 1/3 Cup Salt 1/4 Cup Sugar 4 Tbsp MSG

looking at it again, it must be a typo! what can you brine in 4 cups of water?? not even a leg lol was it 4 pints? Brine Ingredients --------------------------- 4 Cups Water 1/3 Cup Salt 1/4 Cup Sugar 4 Tbsp MSG Not a typo. I'll take pictures next time I make chicken. I normally cook about six to eight drumsticks at a time. You can obviously scale up or down for your needs.

I just made this tonight and it was absolutely delicious. Exactly like the KFC i'm used to eating here in Australia.

it look very good recipe just 1 thing i wondering
it say 11 spice your recipe only use 10 spice i thy same recipe but additional item nutmeg it gave more flavor taste it was good with your way but the extra make better but love your also
4g Black Pepper
34g White Pepper
14g Garlic Powder
7g Onion Powder
5g nutmeg or substitute Mace
7g Sage
7g Cayenne Red Pepper
7g Ginger
7g Coriander
5g Star Anise
4g Savory
4g Clove
4g Marjoram
2g Thyme
2g Rosemary

Well after cooking enough fried chicken within the last week to feed the entire planet i think i've finally settled on my go to recipe. Highonascii's but with 15g spice and 28g salt. Absolutely delicious. Will never need to go to KFC again.

Two questions a can you use milk and egg wash instead of the powders? And question b can you lower the amount of salt in the brine? Kosher chickens are already dry brained to remove the blood and that's the only chicken I can get my hands on thanks in advance
